He who eats celebrates

Comer es recolectar,
recoger y
almacenar, pero
no sólo en el cuerpo, no sólo fuerzas
y vitalidad y por tanto materia,
sino también sentido y sentimiento,
espíritu. No sólo somos lo que
comemos, sino también lo que hemos
sentido comiendo, la impresión a
veces indeleble que este repetido acto
vital deja en nosotros y ayuda a forjar
nuestra particular historia y nuestro
personalísimo carácter.
To eat is to accumulate, to gather and
store energy, to create strength
and vitality, not only in a purely
physical sense but also in terms of emotions
and the spirit. We are not just what we eat but
also what we have felt while we are eating: the
sometimes indelible impression which this simple
vital act leaves upon us which becomes part of our
personal history and unique sense of self.

Comemos y convivimos y al hacerlo celebramos con
los demás, compartimos ese acto con ellos/otros,
es decir, concelebramos. Así toda una vida.
Sapiencias que guardamos celosamente en nuestra
memoria desde nuestra más tierna infancia hasta
nuestra menos masticable vejez.
Por eso, al continuar comiendo, al recomer,
nos reconcomemos los sesos para saber a qué
nos sabe lo comido, para encontrar en nuestra
despensa gustativa qué, cuál, quién, cuyo es
ese sabor, de dónde nos viene. Y al encontrarlo
en la cuarta repisa, al fondo, justo detrás de
aquellas latas, rememoramos aquel plato, aquella
receta, ese producto que tanto nos gustaba, que
siempre nos gustó tanto. Y recordamos al tiempo
a las personas con quienes lo compartimos y a
aquellas otras que nos lo cocinaron.
Sentimos así un revuelto de placeres, un panaché
de sentimientos y agradecimientos a las madres
tierra y mar que nos los dio y a la madre mía,
tuya, suya o de aquél que, como en la mayoría de
los casos, nos los preparó y guisó para este o
ese gordo que todo se lo comió.
Así, con este libro conmemoramos a todas las
madres y padres, abuelas y abuelos, cocineras y
cocineros que hicieron y dieron de comer a los
andaluces las recetas de esta tierra, de tal
manera que por siempre recordarán cuán ricos
somos y lo mucho y lo bien que sabemos ...
Disfrutarlo. Tranquilamente: no seas memo, come
con demora, rememora y conmemora.
We eat and partake of food in the company of others
and in so doing, we share this act with them, that
is to say, we celebrate together. This goes on
throughout the whole of our lives. This creates
a kind of wisdom which we jealously guard in our
memories from our earliest childhood until our less
palatable old age.
In this way, as we eat, and savour all the different
flavours, we search our personal pantry of memories
to identify what a particular taste is and where
it comes from. And when we locate it on the fourth
shelf at the back, just behind a few tins, we
remember that dish, that recipe, that product which
we always liked so much. And at the same time, we
remember the people whom we shared it with and those
who cooked it for us.
In this way we experience a concoction of pleasures
and feelings of gratitude towards the mother earth
and the sea which provide for us, as well as all
our own mothers, who were the ones who usually
prepared and cooked the meals which we gobbled up so
greedily.
Thus, the aim of this book is to remind us of all the
mothers, fathers, grandmothers, grandfathers, and
other cooks who prepared and fed us their typical
Andalusian recipes, dishes which will always remind
us of the finest flavours of the region... Relax and
take the time to remember, celebrate and relish what
you eat at your leisure.

Que caiga en vuestras manos una
tercera edición de nuestro
Andalucía Cocina Andalucía
no es casualidad. Que LANDALUZ ahora más que
nunca esté de forma decidida al lado de quien le
corresponde, con quien hace gala de “lo nuestro”
es sin lugar a dudas, ley.
Seguir apoyando a nuestros cocineros es para
nosotros, más que un deber, una obligación. Más
que una estrategia, el firme compromiso que se
nos presupone. Recordar, rememorar, conmemorar
y no dejar de forma permanente de echar la
vista atrás es de bien nacidos. Por que ser
agradecidos por la herencia, por el legado, por
ese tesoro cultural transmitido de generación
en generación y plasmarlo en estas páginas era
un deber.
Porque un recetario no es, ni más ni menos,
que un conjunto de sabios consejos en forma de
ingredientes y marcas, ligados a lo más profundo
de nuestros recuerdos, de nuestras emociones:
que si una pizquita de sal, que si una cuchara de
tal, que si un poquito de cual...
Detalles y recomendaciones de cómo afrontar el
hecho físico de llenar la barriga convirtiéndolo
en el hecho emocional de recordar en familia,
con amigos o en determinadas épocas del año...
a los que no están, a los que se han ido, a
los que volverán… siempre en torno a una mesa
celebrando, cómo no, el paso del tiempo y la
permanencia de un legado. Es hora de sentirnos
orgullosos de lo que hacían nuestros mayores en
nuestra tierra, Andalucía, y lanzarlo al mundo.

It is no coincidence that the third
edition of Andalusia cooks Andalusia
is now in your hands, and there is
certainly no doubt that LANDALUZ is now more
committed than ever to working side by side with
the relevant people, with those who take pride
in displaying “the very best of our region”.
For all of us, the continued support for our
chefs is more than a duty, it is an obligation.
Rather than a strategy, it is a commitment which
we are more than happy to assume. Remembering,
commemorating, looking back and celebrating the
past is an act of grace. Showing appreciation
for our heritage, and the legacy of a cultural
treasure which has been passed down from
generation to generation, and then documenting
it in these pages, was something we felt
compelled to do.
A recipe book is no more and no less than a
collection of wise tips about ingredients and
iconic brands, all of which are linked to our
deepest memories and emotions: a pinch of salt,
a spoonful of such or such ingredient...
These ideas and suggestions are aimed at
transforming the simple act of filling the
stomach into an emotive experience which is
shared with friends and family at special times
of the year to remember those who are absent,
those who are no longer with us, or those who will
hopefully return… gathered around a table to
celebrate, of course, the passing of time and the
permanence of a legacy. The time has come to take
pride in what our elders have achieved here in
Andalusia, and tell the whole world about it.

Una de las funciones más destacadas
de la Consejería de Agricultura
y Pesca de la Junta de Andalucía
es la promoción y defensa de nuestros productos
agroalimentarios, especialmente aquellos
que cuentan con una calidad diferenciada. En
este sentido, la colaboración que mantenemos
con la Asociación Empresarial de la Calidad
Certificada (LANDALUZ), para la promoción de
alimentos que cuentan con el distintivo andaluz
de calidad certificada ha sido siempre una de
las más fructíferas.

Dentro de las múltiples actividades que se vienen
desarrollando dentro de esta colaboración se
encuentra la edición de este libro, que constituye la
tercera versión de una serie que se inició en 2009 con
el título “Andalucía Cocina Andalucía”, con el fin
de que los alimentos andaluces recorrieran el mundo
de la mano de nuestros mejores chefs.
La anterior edición, bajo el título “Andalucía
Destapa Andalucía”, estuvo dedicada a esa cocina en
miniatura que va camino de convertirse en vehículo
universal de nuestra gastronomía. En esta edición
le toca el turno a nuestro recetario tradicional. En
esta ocasión, una treintena de chefs han colaborado
de nuevo para conmemorar recetas de siempre,
renovándolas y recuperando lo mejor de nuestra
tradición y nuestros alimentos.
“Andalucía conMemora Andalucía” servirá no sólo para
difundir nuestros excelentes productos, sino también
toda la cultura que les acompaña. Como andaluces
podemos estar orgullosos de contar con alimentos
extraordinarios, muy apreciados en todo el mundo por
su calidad y sabor y que forman parte de un importante
patrimonio de la humanidad, como es la Dieta
Mediterránea. De hecho, durante mis visitas a otros
países he podido apreciar cómo nuestros productos
van ganando adeptos día a día, frente a otros que
tradicionalmente dominaban el mercado.
No me cabe duda de que la publicación que tiene en
sus manos, con sus sugerentes fotos y textos, será un
placer para los sentidos y le hará apreciar aún más
la cocina andaluza y sus alimentos. Mi más sincero
reconocimiento para todas aquellas personas que han
hecho posible esta interesante conmemoración de
nuestro mejor patrimonio gastronómico.
One of the most

roles of the
Department of Agriculture and
Fisheries of the Andalusian
Regional Government is to
promote and support our agro-food
products, focusing particularly
on those of outstanding quality.
In this respect, our collaboration
with the Business Association for
certified Quality (LANDALUZ)
for the promotion of Andalusian
produce with a certified quality
seal has always been fruitful and
effective.
One of the many activities which
have been developed under the
framework of the collaboration
is the publication of this book,
the third in a series entitled
“Andalusia Cooks Andalusia”.
Beginning in 2009, it was aimed
at promoting Andalusian cuisine
throughout the world and featured
several of our finest chefs.
The previous edition, entitled
“Andalusia UnCovers Andalusia”
was dedicated to tapas, that unique
form of miniature cuisine which is
fast becoming the most influential
ambassador for our gastronomy in
the world.
In this edition, the focus is
on our most traditional dishes.
Some thirty chefs have once again
helped us to rescue time-honoured
recipes, by renewing them and re-
establishing the best of our food
and culinary traditions.
The aim of “Andalusia comMemorates
Andalusia” is not only to promote
our finest products, but also to
focus on the whole culture which
surrounds them. As Andalusians,
we should be proud of having
food products which are widely
appreciated throughout the world
for their exceptional quality
and flavour, and the fact that
they are part of a unique cultural
heritage: the Mediterranean Diet.
In fact, during my visits to other
countries, I have increasingly
noticed how our products
are attracting more and more
followers, taking over from others
which have traditionally dominated
the market.
I am certain that the publication
that you now have before you,
with its attractive pictures and
texts, will be a feast for the
senses and will help you to further
appreciate the region’s food and
culinary traditions. I would like
to express my deepest gratitude
and recognition to all the people
who have made this fascinating
celebration of our finest
gastronomic heritage
possible.

Andalucía es una potencia mundial
en el mercado agroalimentario
y líder nacional en
exportaciones, con una quinta parte de la
factura española. Son las empresas andaluzas
las que consiguen este logro, que crece año tras
año, gracias a su calidad y su innovación. Hasta
2.782 compañías andaluzas vendieron alimentos y
bebidas a todo el mundo en 2010.
Desde Extenda apoyamos sus estrategias en
los mercados exteriores; identificamos
oportunidades para ellas; colaboramos en su
promoción; en la formación de su personal y les
asistimos sobre el terreno en una treintena de
países, que son los de mayor valor para nuestros
productos. El año pasado fueron más de 400
acciones las que desde Extenda realizamos con el
sector agroalimentario, en las que participaron
más de 1.300 empresas andaluzas.
En estas estrategias promovidas desde la
Consejería de Economía, Innovación y Ciencia,
a la que pertenecemos, la colaboración con
LANDALUZ es siempre una constante. La tercera
edición de esta obra titulada “Andalucía
conMemora Andalucía” es un ejemplo más de ello.
Creemos que es una oportuna línea de promoción
la unión de los exquisitos productos que
nacen en esta tierra con los mejores chefs del
momento, precisamente en el momento en que la
cocina española alcanza sus más altas cotas de
reconocimiento.
Desde Extenda “cocinamos este plato” con profusión.
En los fogones de todo el mundo realizamos show
cooking, cursos y concursos de cocina, seminarios,
etc. Desde Rusia a Hungría, pasando por Japón y
otros países, el éxito de estas acciones es notable.
Porque junto a la constatación de nuestro volumen
productor, a Andalucía, a nuestros productos y a
nuestra agroindustria se le reconoce en todo el
mundo también por la calidad. Y es en estas fechas
en las que un aceite de oliva andaluz, de Jaén,
acaba de lograr en EE.UU. el conocido como “Óscar de
la Alimentación”, el Sofi Award de Oro, siendo el
primer aceite de oliva español en lograrlo.
Este ejemplo, en un mercado tan competitivo, es, sin
duda alguna, un reconocimiento a todos los aceites
andaluces, nuestro producto estrella, que cada vez
genera mayor valor añadido, que gana terreno a su
principal competidor en todo el mundo y que lidera
las ventas mundiales en los dos grandes mercados de
mayor potencial, China e India.
Por tanto, este año Andalucía conMemora Andalucía,
pero, a través del reconocimiento que cada día se
hace de sus productos, su agroindustria, su cocina,
su Dieta Mediterránea, también el mundo conmemora
Andalucía. Desde Extenda-Agencia Andaluza de
Promoción Exterior, trabajamos apoyando a nuestras
empresas para que cada vez más eso sea así.

Andalusia is an important world
player in the agro-food market
and a national leader in terms
of exports for the sector, with figures which
account for a fifth of the Spanish total. It is
the individual Andalusian companies themselves
that have achieved this success, as they grow year
by year thanks to the quality of their produce
and their innovative methods. During 2010 some
2,782 Andalusian companies sold food and drink
products throughout the world.
Extenda supports their strategies in foreign
markets with a whole variety of initiatives: we
identify export opportunities; we collaborate in
promotional activities; we help with training
of personnel; and we are active on the ground
in approximately thirty countries which are of
greatest importance for the region’s produce.
Last year Extenda carried out 400 different
activities in the agro-food sector, with the
participation of more than 1,300 Andalusian
companies.
Although the strategies are promoted by the
Ministry of Economy, Innovation and Science, to
which Extenda belongs, they are always planned
in collaboration with Landaluz, and the third
edition of ‘Andalusia Commemorates Andalusia’
is a good example of this cooperation. We see
this as an ideal time to promote the finest
products of the region through the involvement
of the most prestigious chefs, precisely because
Spanish cuisine is currently so highly regarded
throughout the world.
At Extenda we “add to the menu” as much as
we can. We organise cooking demonstrations
throughout the world, alongside a series of
courses, seminars and cooking competitions. In
countries such as Russia, Japan, and Hungary,
amongst others, the success of these promotional
activities is clearly evident.
Apart from the volume of production in our
agro-food industry, Andalusia is also rapidly
gaining a well deserved international reputation
for quality. In the United States, an olive
oil from Jaen has just received a Golden Sofi
Award, in what are regarded as the Oscars of the
culinary world, the first Spanish olive oil to do
so.
This level of success in what is such a
competitive market is without doubt recognition
of the quality of all Andalusian olive oils.
Our province‘s leading product generates ever
greater added value and is increasingly winning
the export battle with our main competitor.
It is now the market leader in two of the most
significant and rapidly growing economies in the
world: China and India.
As such, as the title indicates, Andalusia
commemorates Andalusia, but thanks to the
rapidly growing reputation of its agro-food
industry, its produce, its gastronomy, and
its Mediterranean diet, Andalusia is now
commemorated the world over, and at Extenda
–the Andalusian Agency for International
Promotion– we work tirelessly to ensure that this
continues to be the case.

Puede resultar
paradójico
hablar desde
la Fundación de una entidad
financiera de las excelencias
agroalimentarias de nuestra
querida Andalucía. Aun más,
se podría apreciar incluso
sorprendente, a menos que viniera
motivada por la petición que
pudiera corresponder al protocolo
de la edición de una obra, un
recopilatorio de recetas o
publicación de una guía de bares
y restaurantes. Esto va mucho más
allá, no lo duden.
Para despejar incertidumbres
a este respecto sería preciso
recordar qué son las Cajas Rurales
en Andalucía, cual ha sido su
papel y qué conexión tienen en el
devenir de los productores de la
materia prima fundamental: los
alimentos.
Las cajas rurales hacen ya muchos
años que surgen en el medio que las
identifica, su denominación no
es baladí. Es en la década de los
años 50-60, años fundamentales
para la reconstrucción de las
cooperativas de crédito en
nuestro país, cuando renacen
de forma casi espontánea,
auspiciadas por la perentoria
necesidad de dar soluciones
financieras al sector agrario.
En aquellos momentos imperaba
la urbe y lo industrial antes
que lo rural y lo agrario, algo
no criticable, en cualquier
caso, oportuna su reseña. Con el
devenir de los años esta situación
cambió ostensiblemente, hasta el
punto que, hoy por hoy, el sector
agroalimentario andaluz es de
los pocos sectores económicos
y productivos que siguen
manteniendo entre sus activos
la posibilidad de afrontar la
situación actual y el futuro con
ciertas esperanzas.
Precisamente este nuevo libro
es signo del activo y fruto del
compromiso que esta entidad,
a través de su Fundación Caja
Rural del Sur, tiene para y con
el sector agroalimentario. Las
exquisiteces de los productores
de vinos y vinagres, aceites,
frutas y sus transformados,
conserveras, lácteos, cereales
y leguminosas, cárnicos tan
excelsos como el cerdo ibérico,
incluso piscícolas y hortícolas,
hacen posible que los genios
de los fogones, amantes de la
innovación culinaria pero al
mismo tiempo mantenedores de
los sabores tradicionales, y a
modo de malabaristas gustativos,
dibujen con la forma de nuestra
geografía andaluza un simpar
arcoiris de sorprendentes recetas
que deleitan a los más refutados
paladares.
Este proceso final hace que los
productores agroalimentarios de
Andalucía se afanen en su labor
callada y paciente, orgullosos
sabedores de producir los
ingredientes precisos para
componer una melodía gourmet
digna del mejor comensal,
referente del más exigente
turista y razón para sentirnos
paradigma del buen hacer, desde
el campo hasta la mesa. Desde el

I am aware that it
may seem somewhat
unusual to ask
someone from the foundation
of a financial institution
to write about the excellence
of the foodstuffs produced in
our beloved Andalusia. And it
certainly would be strange,
were it not for the fact that
it is part of the publication
of a book of recipes and a bar
and restaurant guide. But I can
assure you, it goes much further
than that.
To explain a little more clearly,
it would perhaps be worth
describing exactly what the
Andalusian Cajas Rurales are,
and the role they’ve played in
the development of the vital raw
materials: the food products
themselves.
The Cajas rurales, as their name
itself suggests, were set up
many years ago in areas with a
rural agricultural character.
It was during the 1950s and 60s,
a fundamental period for the
redevelopment of the cooperative
credit societies in Spain, that
these bodies re-emerged, almost
spontaneously, in response to
the evident necessity to provide
financial resources to the
agricultural sector. During the
period in question, the city
and the industrial world were
considered much more important
than the rural agricultural
environment, a logical response
to the situation at the time.
With the passing of the years
however, the situation has
changed dramatically, and
nowadays the agro-food industry
is one of the few economic and
productive sectors which has
been able to adapt to the current
situation and face the future
with a certain level of optimism.
This new book is evidence of
the active commitment of this
institution, through its Caja
Rural del Sur Foundation, to the
region’s agro-food sector.
The finest wines and vinegars,
oils, fruits, jams and
preserves, dairy products,
cereals and vegetables,
fish, and prime quality meats
such as Iberico pork, have
encouraged the cuisine gurus,
those instigators of culinary
innovation who, at the same
time, are guardians of our most
traditional dishes, to combine
flavours and aromas from the
whole of Andalusia and produce a
colourful rainbow of surprising
recipes which can captivate even
the most discerning of palates.

Andalusian agro-food producers,
who, using their patience and
skill, create the ingredients
required to compose a veritable
masterpiece, a wonderful
dish which would please the
most demanding of tourists or

andaluz supone unos ingresos
superiores a 12.000 millones de
euros, consolidándose en la actualidad como el

CELESTINO GÓMEZ PARRA. S.A. es una empresa familiar
ubicada en el Valle de Los Pedroches, en pleno
corazón de Sierra Morena, en la provincia de
Córdoba, dedicada a la elaboración de productos
provenientes del cerdo ibérico.
La crianza de los cerdos que se encuentran en sus
explotaciones se realiza de forma natural,
viviendo los animales en contacto con la naturaleza
y rodeados de encinas y vegetación típica del
bosque mediterráneo. Los amplios espacios en los
que se encuentran libres posibilitan el desarrollo
adecuado de la musculatura de los cerdos ibéricos,
propiciando que la grasa natural de estos animales
se infiltre en la carne y posteriormente, cuando se
saborean los productos que de ella se obtienen, se

Por otra parte, al contar con ganadería propia en
sus fincas se controla toda la trazabilidad de sus
productos, desde que el cerdo pasta en la dehesa
hasta que se fabrican y se venden sus jamones y
embutidos. Las marcas con las que se comercializan
sus productos son principalmente CELESTINO GÓMEZ y
CINCO GENERACIONES, esta marca se destina al sector
de la restauración y exportación. Es la empresa
andaluza del sector del ibérico con más productos
que tienen la marca Calidad Certificada, otorgada
por la Junta de Andalucía.
Durante su dilatada trayectoria empresarial esta
empresa ha recibido numerosos galardones, el último
consistió en la obtención de 8 medallas de oro
en la Feria IFFA de 2010 de Frankfurt a todos los

Es curioso, lo primero que se me
viene a la mente son aquellas
tardes de domingo que íbamos a
visitar a nuestras abuelas y abuelos. Recuerdo
perfectamente en casa de mi abuelo Pepe y mi
abuela Carmen, cómo le pedía que me cogieran ese
libro rudo y de pasta grande que tenían en la
parte alta del mueble del salón.
Ese libro, que tan embobado me dejaba y tanto
me entusiasmaba, era un libro de Cándido (gran
cocinero y todo un clásico). Me quedaba mirando
las fotos de los platos con entusiasmo, cerraba
los ojos y ocurría algo muy curioso: imaginaba a
qué olerían esos platos tan suculentos. También
tengo el recuerdo perfecto del olor de las
páginas de ese libro.
Recuerdo con curiosidad los aromas de cocina tan
diferentes de las casas de cada abuela, cada una
con su truquillos, sus especias y, claro, cada
una de una región diferente: Sevilla y Granada
(¡qué dos buenas culturas gastronómicas!).
Recuerdo también preguntarle a mi abuela Isabel
por cómo había hecho aquello que tan bien olía al
entrar en su casa, mientras estábamos sentados
en la camilla con la estufa encendida. Ella me
contaba los lunares de la espalda, con esas
manos tan finas y desgastadas por el paso de los
años... Ufff, qué recuerdos. Gracias abuelos.
It’s odd, the first thing that
comes to mind are those Sunday
afternoons when we went to
visit our grandparents. I remember being in the
house where my grandfather Pepe and grandmother
Carmen lived, and them asking me to get that
huge recipe book down from the high shelf in the
living room.
That book which I loved so much and had such an
impression on me was by the great cook Cándido.
I remember happily looking at the photos of the
different dishes for hours. I used to close
my eyes and something very curious happened:
I could actually smell the amazing aromas of
the food in the pictures. I can also remember
perfectly the smell of the pages of the book
itself.
I can also recall the different aromas of the
kitchens in the houses of my two grandmothers,
each one with its different spices and little
tricks, one of them in Seville and the other
in Granada (what a great pair of gastronomic
cultures!)
I remember sitting on the bed with the heater on
and asking my grandmother Isabel how she managed
to make her house smell so amazing when you
entered it. She used to count the freckles on my
back, with those thin hands, worn out with the
passing of time... What memories they are! I can
only thank my grandparents.

150 grs. de Jamón Ibérico de Bellota

6 dientes de ajo
1 litro de agua o caldo de ave
1 cuchara sopera de pimentón
4 huevos
3 setas de temporada
150 grs. de pan de miga
sal
4 hojas de hierbabuena
6 cucharadas soperas de Aceite de
Oliva Virgen Extra
Elaboración
En un cazo calentamos el aceite
y doramos los ajos cortados
previamente en finas láminas.
Le incorporamos los taquitos de
jamón, las setas y el pan. Cuando
esté todo dorado incorporamos el
pimentón, rehogamos brevemente y
añadimos el caldo y la hierbabuena.
Lo dejamos cocer 20 minutos a fuego
medio. Unos minutos antes de servir,
añadimos los huevos y dejamos
que cuajen con el propio
calor del
sopeado.

150 g Iberico ham Celestino Gómez Parra cubes
6 cloves of garlic
1 litre water or chicken stock
1 tablespoon of paprika
4 eggs
3 fresh mushrooms
150 g French bread
salt
4 mint leaves
6 tablespoons of Extra Virgin Olive Oil
Method
Heat the oil in a pan and fry the garlic, thinly
sliced, until golden brown.
Add the ham cubes, the mushrooms and bread. Fry until
golden brown, add the paprika. Stir fry for a few
minutes and then add the stock and mint leaves. Cook
on a medium heat for 20 minutes.
Toss the eggs into the pan a few minutes before
serving and leave them to solidify with the heat from
the soup.

Loprimero que se me viene a la
memoria son los días en los que
estaba lloviendo y no podíamos
salir a la calle. Esos días nuestra madre nos
entretenía harinando croquetas y cocinando
algún bizcocho de los de toda la vida. De
música de fondo recuerdo cómo mi madre nos
volvía locos con José Luis Perales. Siempre
había grandes disputas por ser el primero en
probar el pastel sin permiso y, por supuesto,
siempre era yo el más glotón y quien se lo
comía a escondidas.
El encanto de las cocinas de nuestras
madres es el tiempo. La vida era más lenta
y a la cocina se le dedicaba el tiempo que
necesitaba.
Most cherished memories are those
rainy days when we couldn’t go
out. That was when our mother
used to entertain us by preparing croquettes or
baking one of those traditional cakes, always
with music on in the background. I remember
how she used to drive us crazy with her José

Montar los huevos con el azúcar al máximo. Una

Recuerdo sobre todo las
comidas familiares en
las que se cocinaban
platos a gusto de cada uno de nosotros.
Que si unas papas aliñás que le
encantan a Fulano..., que no falte el
cordero asado que Mengano se pirra por
él...
Recuerdo cuando volvía del colegio a
mediodía, el olor a guiso envolvía toda
la casa. Asocio cada una de las fiestas
a la gastronomía. Semana Santa:
bacalao con tomate, espinacas con
garbanzos, arroz con leche y torrijas.
Navidades: pavo relleno, perdices y los
dulces de la temporada (polvorones,
rosquillas y alfajores). La llegada del
verano la anunciaba el gazpacho con el
ruido de la maja en el lebrillo.
El cariño y la generosidad con que
cocinaban todo era el encanto de la
cocina de las abuelas. Al no existir
los transportes tal como se entienden
en estos tiempos, las materias primas
no tenían más remedio que ser locales y
estacionales.
Above all I remember family meals
where we were all given our
favourite dishes. The typical
potato salad with dressing or a roast lamb were
an absolute must for some of us.
I remember how when I came home from school
at lunchtime the smell of the food filled the
whole house. I also think of all the different
fiestas in terms of food. Easter week: cod with
tomato, spinach with chickpeas, rice pudding
and torrijas. Christmas: turkey with stuffing,
partridges and the traditional cakes and
pastries of the festive season (polvorones,
rosquillas and alfajores). The arrival of
summer always coincided with gazpacho and
the sound of ingredients being crushed in the
mortar.
The care and generosity with which they cooked
everything was the key to our grandmothers’
cuisine. Because there wasn’t the transport
and mobility that we have today, there was no
option but to use ingredients which were local
and seasonal.

medallones
6 dientes de ajo
perejil

100 ml Aceite de Oliva D.O. Priego de Córdoba

guarnición: 1 kg. de patatas
Elaboración
Para la guarnición: Se pelan las patatas y se
lavan. Se cortan a bastoncillos y se fríen a
190oC. durante 6 minutos.
Para la carne: se saltea el ajo, previamente
laminado, en aceite de oliva. Seguidamente,
se añaden los medallones de ternera (a 150oC.
durante 2 minutos). Recomendamos poco hecho.
Se monta la guarnición al centro del plato,
se colocan los medallones sobre éstas, se le
agregan los ajos y algo de aceite de oliva de la
sartén. Se decora con perejil.

1kg clean veal sirloin, cut into medallions
6 garlic cloves
parsley
salt
100 ml Olive Oil D.O. Priego de Córdoba Venta

garnish: 1 kg potatoes
Method
For the garnish: peel and wash the potatoes. Cut
into sticks and fry at 19oC for 6 minutes.
For the meat: sauté the garlic, finely sliced,
in olive oil. Add the veal medallions, fry at
150oC for 2 minutes. Better to keep rare. Place
the potatoes in the centre of a serving dish,
lay the medallions on top, add the garlic and
pour some of the oil from the frying pan around.
Decorate with a garnish of parsley.

Cuando nos ponemos a recordar
nos damos cuenta de que
nuestros recuerdos no son
tan distintos. Tres familias totalmente
diferentes que la cocina ha unido. Se trata
de ese recuerdo hermanado, el cual siempre
viene de la visita a una abuela, a una tía...
de ese familiar que reposaba con cariño el
guiso soñado, la elaboración idealizada en una
mañana de domingo, el sabor añorado frente a
una chimenea... reflexionando nos damos cuenta
de que son las bases de la cocina que hoy en día
practicamos.
El encanto de la cocina de nuestras abuelas,
de sus guisos y sopas, es la necesidad, la
cultura, la tradición... pero sobre todo el
amor y dedicación que empleaban en cada uno de
sus pasos, en cada una de sus elaboraciones,
en cada cucharada, en cada pizca, que eran los
verdaderos ingredientes mágicos de sus recetas.
Esta es una profesión que siempre está dispuesta
para adquirir algo nuevo. Por ello, gracias a
todos aquellos amigos que con su granito de arena
nos van formando.
When we start to talk about our
childhood memories we find that
they’re not that different. Three
completely different families, united by a culinary
past. It is a memory we share with our brothers and
sisters, and it comes back to us whenever we visit a
grandmother, an aunt, a relative who laboured over
our favourite dish on a Sunday morning, or we remember
the taste of a meal eaten by the fireplace... when we
think about it, we realize that these memories and
experiences are the basis of the way we prepare our
dishes today.
The charm of the way our grandmothers cooked, of their
stews and their soups, was the sense of necessity, the
culture, the tradition… but above all the love and
dedication that went into everything they did, every
meal they made, every teaspoon, every little detail
which were the real magic ingredients of their
recipes.
This is a profession which is always open to new ideas
and I feel grateful to all those friends who have done
their part to teach us our craft.

Para el taboulé:
Comenzaremos por picar muy finamente los
altramuces hasta conseguir una textura
similar a la sémola de trigo. Reservaremos.
Seguidamente pelaremos los tomates, le
quitamos las pipas y lo cortamos en dados, al
igual que el pepino. Reservamos.
Picamos finamente la cebolla y pasamos
a fondearlas al fuego junto a las pasas.
Reservamos.
Picar la menta en juliana.
Finalmente, pasaremos a unir todos los
ingredientes en un bol, con la ayuda de una
cuchara iremos removiendo y homogeneizando
con aceite de oliva. Pondremos a punto de sal y
pimienta. Reservamos.
Para las gambas:
Ponemos abundante agua en el fuego con una
hoja de laurel. Cuando ésta rompa el hervor
verteremos las gambas de golpe.
Justo antes de que el agua vuelva a romper el
hervor, sacaremos las gambas para sumergirlas
en un bol con salmuera y hielo. Reservamos.
Para los pepinillos:
Ponemos los pepinillos en el vaso americano
y lo accionaremos a la máxima potencia
hasta conseguir un coulis liso y homogéneo.
Pondremos a punto de sal.
Para las olivas:
Ponemos las olivas en el vaso americano y
lo accionaremos a la máxima potencia hasta
conseguir un coulis liso y homogéneo.
Pondremos a punto de sal.
Montaje:
Escudillaremos el taboulé en el plato. Sobre
éste colocaremos las gambas y los brotes.
Finalmente, iremos disponiendo puntos
aleatorios de pepinillos y olivas negras.

Para el taboulé: Altramuces de Saladitos, tomate, pepino, cebolla, pasas, menta, aceite de
oliva, sal, pimienta
Para las gambas: gambas, hoja de laurel, sal, hielo

Paso a paso Step by step
For the taboulé:
Chop the lupine beans very finely
to a texture similar to couscous.
Set aside. Peel the tomatoes,
remove the seeds and dice. Repeat
the procedure with the cucumber.
Set aside.
Chop the onion finely, fry
lightly together with the
raisins. Set aside.
Julienne the mint leaves.
Finally, mix all the ingredients
in a bowl, stir with a spoon
and add oil until the mixture
achieves a smooth consistency.
Season with salt a pepper to
taste. Set aside.
For the prawns:
Boil a large quantity of water
with a bay leaf. When it reaches
the boiling point, add all the
prawns at the same time.
Remove the prawns before the
boiling point is reached again,
place them in a bowl and soak in
brine and ice. Set aside.
For the gherkins:
Place the gherkins in an
American-style processor and
process at maximum speed to a
smooth coulis. Add salt to taste.
For the olives:
Place the olives in an American-
style processor and process at
maximum speed to a smooth coulis.
Add salt to taste.
Presentation:
Tip the taboulé into a bowl.
Lay the prawns and shoots on top
and distribute the gherkins and
olives.

Desde muy niño ya ayudaba a mi
padre en nuestra taberna, que
entonces era un despacho de
manzanilla, y recuerdo por las tardes cuando
llegaba a casa (y con hambre) ese olor al potaje
de garbanzos con pringá y tallos que preparaba
mi abuela María; o ese rape que mi madre maceraba
con ajo, perejil y limón y que luego cocinaba al
vapor con un chorrito de aceite de oliva.
Esos momentos y mi afán de superación me
hicieron desde muy joven aventurarme en
la cocina e indagar en los guisos que esos
marineros me contaban que preparaban a bordo de
sus precarias cocinas con los productos básicos
y tan ricos que nos ha brindado siempre esta
tierra sanluqueña, me refiero a las verduras
y hortalizas de los navazos, las papas de la
colonia y al pescado de las jarampas, el safio,
la temblaera, la araña ...
El encanto de la cocina de nuestras abuelas es
el cariño y la mucha imaginación que ponían
para preparar, a veces con pocos recursos,
deliciosos platos.

When I was only a little boy I
used to help my father in our
Nuestra Taberna, a bar which
specialised in Manzanilla. When I came home
from school I was starving and I remember the
wonderful smell of the chickpea casserole which
my grandmother made with meat and vegetables or
the steamed monkfish which my mother seasoned
with garlic, parsley, lemon and olive oil.
Those experiences and my quest for
self-improvement led to me taking up cooking
in a more serious way and I learnt about the
traditional stews prepared in the simple
kitchens of ships by sailors using the most
basic but marvellous ingredients to be
found around Sanlucar. I’m referring to the
vegetables produced in the coastal orchards,
the potatoes brought from the American
colonies, the local fish (jarampas, safio,
temblaera, araña...).
The real charm of our grandmothers’ cooking lay
in the way they used love, dedication and a lot
of imagination to create delicious dishes with
very limited resources.

Ingredientes para 4 personas
4 filetes de corvina
8 langostinos cocidos
1 tomate de ensalada
1 cebolleta
pepinillos
pimiento morrón
4 dientes de ajo
1 copita de amontillado
un poquito de brandy
Aceite de Oliva Virgen Extra
sal
Mayonesa Ybarra
Elaboración de nuestra salsa tártara
Picamos muy menudito 4 ó 5 pepinillos, la
cebolleta y un pimiento morrón. En un bol
mezclamos todo con la Mayonesa Ybarra y un
chorrito de brandy. Apartamos.
Elaboración del aceite de ajos
En una sartén con aceite de oliva virgen freímos
los ajos que previamente hemos cortado en juliana
y cuando tienen un puntito de dorado flambeamos
con el amontillado. Apartamos.
Elaboración del plato
Cortamos el tomate y varios pepinillos en
rodajas. Cortamos los langostinos al largo por
la mitad. Cortamos la corvina en filetitos más
pequeños y ponemos un poco de sal.
En la plancha a fuego fuerte doramos los filetitos
con un poco de aceite de oliva pero teniendo
precaución de que queden jugosos por dentro.
Emplatamos en plato llano acompañándolo de unas
rodajitas de tomate y sobre éstos unos pepinillos.
Sobre la corvina ponemos una cucharadita de
nuestra salsa tártara y sobre la salsa un filetito
de langostino, para rematarlo con un poco del
aceite de ajos caliente por encima.
Listo para comer.

Ingredients for 4 people:
4 meagre fillets
8 king prawns, cooked
1 salad tomato
1 spring onion
Gherkins
Sweet red pepper
4 cloves of garlic
1 small glass of amontillado
A little Brandy
Virgin olive oil
Salt
Ybarra mayonnaise
Method for the homemade tartar sauce
Chop 4 or 5 gherkins, the spring onion and the
sweet red pepper very finely, tip into a bowl
and mix with Ybarra mayonnaise and a splash of
brandy. Set aside.
Method for the garlic oil
Fry the julienne garlic in a frying pan with
olive oil until lightly golden and flambé with
the Amontillado. Set aside.
Method
Cut the tomato and several gherkins into slices.
Cut the king prawns lengthways into halves.
Cut the meagre into small fillets and season with
a little salt.
Grill the fillets over a high heat with a little
olive oil, making sure that they are juicy on the
inside.
Place a few tomato slices on a flat dish and lay
the gherkins on top. Put a small spoonful of our
tartar sauce on the fillets, place a prawn fillet
on top and pour some of the hot oil over it.
Then the dish is ready to eat.

a mí el encanto de la cocina de
nuestras abuelas es la paciencia,
la dedicación, el tiempo que se
dedicaba a los guisos, sopas y cualquier cosa que
preparasen... todo sin prisas.
Lo recuerdo como un lugar donde disfrutaba
las vacaciones, los fines de semana... mi
abuela y “abuelo” (en mi familia los hombres
son muy cocinillas) cocinaban todo aquello que
nos gustaba, tanto a los más pequeños como a
los grandes: pimientos asados en la carmela,
choricilllos, lomo en manteca, roscos, pestiños...
y luego lo metían en botes de cristal o cajas para
que nos lo llevásemos. Yo los ayudaba o mientras
intentaba copiar las recetas (aún conservo uno de
esos cuadernos).
For me the charm of our grandmothers’
cuisine was the patience and
the time they dedicated to the
preparation of stews, soups or any other dish they
cooked... everything was done in an unhurried
manner.
I remember it as a place where I enjoyed my
holidays, weekends… my grandparents (in my family
all the men are good at cooking) used to make us
our favourite dishes, children and adults alike:
roasted peppers, small chorizos and loin cooked in
lard, roscos, pestiños... and then they put it all
in glass jars or boxes so we could take it home. I
used to help them and at the same time copied the
recipes (I’ve still got one of those notebooks).

Elaboración
Para las manitas
Limpiar las manitas y poner a
cocer junto con la zanahoria,
una cebolla, el puerro, el trozo
de jamón y los aromáticos. Cocer
hasta que estén tiernas y retirar
del fuego. Dejar atemperar,
deshuesar y trocear. Picar
finamente el ajo, la cebolla y
el pimiento rojo, rehogar con
aceite de oliva e incorporar
las manitas, el tomate rallado
y el vino fino. Reducir y poner
a punto de sal. Hacer rulos y
mantener refrigerado a 4o C.
Para el guiso
Poner los garbanzos en remojo
12 horas, escurrir y poner a
cocer junto con el hueso de
jamón y sal. Aparte picar
todas las verduras y hacer un
sofrito, incorporar la ñora
y el pimentón. Incorporar al
guiso cuando los garbanzos estén
tiernos.
Para servir calentar los
caracoles junto con los
garbanzos; cortar las manitas
y marcar en una sartén
antiadherente. Picar el jamón
ibérico y añadir.
Ingredientes
Para las manitas: 1kg. manitas de cerdo, 1 puerro,
1 zanahoria, 2 cebollas, 1 trozo de Jamón Ibérico
Alta Expresión COVAP, 1 pimiento rojo, 1 diente
de ajo, 1 tomate, Aceite de Oliva Virgen Extra
c.s, 2 hojas de laurel, pimienta en grano c.s, sal

Method
For the trotters
Clean the trotters and cook
them together with the carrots,
onion, leek, the piece of ham
and the aromatic herbs. Cook
until tender and remove from
heat. Leave to stand, debone and
cut into pieces.
Chop the garlic, onion and red
pepper very finely. Stir fry
in olive oil; add the trotters,
the grated tomato and the fino
sherry. Reduce and season to
taste.Make rolls and store in
the fridge at 4O C.
For the casserole
Soak the chickpeas overnight
(12 hours), drain and cook in
salted water along with the bone
of ham. Chop and stir fry all the
vegetables, add the ñora, season
with paprika, and incorporate
into the casserole when the
chickpeas are tender.
To serve, heat the snails with
the chickpeas, cut the trotters
and brown them in a non-stick
frying pan. Dice the Iberico ham
and add to the casserole.

Inddeco es una joven empresa formada por profesionales
de distintas disciplinas con una larga trayectoria
profesional y gran experiencia en proyectos
relacionados con el desarrollo rural y la puesta en
valor del patrimonio en todas sus vertientes: natural,
cultural, etnográfico, etc.
Ganso Ibérico de Dehesa se presenta como un proyecto
alternativo de ganadería ecológica ligado a la dehesa
andaluza, con un aprovechamiento integral de los
recursos que este ecosistema ofrece, garantizando la
preservación del mismo y permitiendo la obtención de
un producto artesanal, extensivo, ecológico y ético
pionero en Andalucía.
El proyecto de desarrollo de Ganso Ibérico de Dehesa,
tiene como escenario natural una finca de 1.500
hectáreas con dehesas de alcornoque y encina, que
nuestros gansos comparten con cerdos ibéricos,
ovejas merinas y cabras. Situada en el municipio de
Constantina (Sevilla), la finca se encuentra en pleno
Parque Natural de Sierra Norte de Sevilla y dentro de
la Reserva de la Biosfera “Dehesas de Sierra Morena”.
Inddeco is a recently established company formed
by specialists in different disciplines with a
sound professional experience in projects related
to the development and valorisation of rural areas
from a range of different perspectives: natural,
cultural, ethnographic, etc.
Ganso Ibérico de Dehesa was conceived as an
alternative project which focuses on ecological
livestock farming practices in typical Andalusian
meadowland areas. It is based on the integrated
exploitation of the resources offered by this type
of ecosystem which guarantees their preservation
and the production of natural, organic and
ethically responsible products which are unique of
their kind in Andalusia.
The project for the development of Ganso
Ibérico de Dehesa (free range Iberico geese) is
being implemented in a 1,500 hectare farm with
meadowlands of cork and holm oaks in which the
geese are reared alongside Iberico pigs, merino
sheep and goats. Situated in the municipality of
Constantina (Seville) the estate is situated at the
very heart of the Sierra Norte de Sevilla Nature
Park, in the “Dehesas de Sierra Morena” Biosphere
Reserve.

Mi infancia está
plagada de recuerdos
gastronómicos. De
hecho, siempre he considerado
que una de las razones por las
que decidí ser cocinero no era
otra que las influencias que he
vivido en mi familia.
Hay momentos inolvidables para
mí que me han dejado marcado,
como el obligado paseo por el
mercado de Marbella todos los
sábados por la mañana a comprar
el pescado fresco y el marisco
que posteriormente íbamos a
comer...
Coquinas, caracolas, cañaíllas,
brótolas, gambas blancas,
centollos, calamares,huevas
de jibia... Pero el más
gastronómico de todos no era
otro que el de nuestros viajes
a Trebujena a comprar angulas,
para tener durante todo el
año al menos una cazuelita a
la semana... son recuerdos
imborrables de momentos en los
que aún no había decidido ser
cocinero...
El encanto de la cocina de la
abuela es sobre todo el encanto
de la cocina tradicional, de
los sabores y olores de toda
la vida, de esa cocina nacida
de la subsistencia y en la que
con cuatro cosas había una
creatividad desbordante hasta
llegar a una receta magnífica.

My childhood is full of
culinary memories. In
fact I always feel that
my family’s influence is precisely
one of the main reasons why I decided
to become a cook.
There are unforgettable memories
which have left a deep imprint in
me, including our traditional
visit to the market in Marbella on
Saturday mornings to buy fresh fish
and shellfish which we would cook
later...
Coquina clams, caracolas, cañaillas,
brótola, white prawns, spider
crab, squid, cuttlefish roe...
However, perhaps my strongest
gastronomic memory is of our trips
to Trebujena to buy enough baby eels
to eat at least a little bowl every
week throughout the year. They are
unforgettable memories of a time when
I still hadn’t decided to become a
chef...
The charm of our grandmothers’
cuisine lies above all in traditional
cuisine, in the lifelong flavours
and aromas. It is a form of cooking
which is based on survival and with
just three or four basic ingredients
and a huge amount of imagination one
could create a magnificent recipe.

Para preparar el ganso
1 pieza de Ganso de INDDECO
Limpiaremos bien el producto y
deshuesaremos separando los muslitos y
las pechugas. A las pechugas les haremos
unos cortes a la parte de la grasa para
facilitar su cocinado.
Una vez las tengamos preparadas, las
doraremos primero por la parte de la
grasa y luego por la parte de la carne,
dejándolas terminar pero teniendo en
cuenta que tendrán que quedar en su punto
en el interior. Las reservaremos en un
lugar cálido hasta el montaje del plato.
Los muslitos los meteremos en una bolsa
al vacío con un poco de sal y tomillo
y cocinaremos a 65o durante 24 horas
aproximadamente, dependerá un poco de la
dureza del producto.
Una vez las tengamos frías, las
deshuesaremos y las cortaremos en
pequeños trozos.
Para el fondo de ganso
½ cabeza de ajo, 1 cebolla, 2 zanahorias,
1 puerro, c/s aromaticos (tomillo,
romero), las carcasas de un ganso (de
unos 2 kg), 200 ml de vino tinto, 100 ml
de oporto, 10 l de agua mineral, 80 ml de
Aceite de Oliva Virgen Extra
Tostaremos las carcasas al horno a unos
180o. Pondremos en una cazuela el aceite
y doraremos los ajos; seguidamente
añadiremos la cebolla, el puerro y la
zanahoria. Pocharemos a fuego medio
durante bastante tiempo, añadiremos
los aromáticos y echaremos los vinos
dejándolos reducir a seco. Después
añadiremos las carcasas y cubriremos de
agua. Dejaremos cocer durante 4 horas.
Colaremos y reservaremos.
Para el sofrito
Pocharemos en el aceite la
chalota a fuego muy suave,
añadiremos el puerro y haremos
lo mismo. Añadiremos el boletus
picado y el tomate y dejaremos
cocinar. Sofreiremos el
pimentón, incorporaremos las
hebras y apartaremos del fuego.
Reservaremos hasta el momento
del pase.
Para el arroz
120 grs. de sofrito
240 grs. de arroz bomba
1000 ml de caldo de ganso

1 pechuga de ganso.

En una cazuela pondremos el
caldo a calentar.
En otro recipiente pondremos
el sofrito y cuando esté
caliente sofreiremos el arroz
ligeramente y verteremos
el caldo. Dejaremos cocer
alrededor de 13 minutos. Cuando
haya transcurrido ese tiempo
añadiremos la carne de muslito
y dejaremos 1 minuto más,
añadiremos la remolacha,el
cebollino picado y dejaremos
reposar. Mientras, calentaremos
la pechuga y cortaremos en finas
lonchas.
Emplataremos el arroz en un
plato semihondo y pondremos con
mucho cuidado las láminas de
pechuga de ganso. Terminaremos
añadiendo un poco de sal Maldon
encima de la carne.

Gooose INDDECO 1 piece
Wash the goose thoroughly,
debone and separate the legs
and breast. Make several cuts
on the fatty part of the breast
so that they cook more easily.
Once prepared, cook them
firstly on the skin side until
golden. Turn them and finish
cooking making sure that they
are properly cooked on the
inside. Set aside in a warm
place until serving.
Season the legs with a pinch
of salt and a sprig of thyme,
place them in a vacuum pack
bag and cook at 65o for
approximately 24 hours,
depending on the consistency
of the product.
Cool down, debone and cut into
small pieces.
Ingredients for the goose stock
½ bulb of garlic
1 onion
1 cebolla
2 zanahorias
2 carrots
1 leek
Tbsp aromatic herbs (thyme,
rosemary)
The carcass of a goose (approx.
2 kg)
200 ml red wine
100 ml port
10 litres mineral water
80 ml Extra Virgin Olive Oil
Toast the carcass in the oven at
approx.180o. Fry the garlic in
a pan until golden brown, then
add the onion, leek and carrot.
Sautee on a medium heat, then
add the aromatic herbs, pour
in the wine and cook until the
liquid is completely absorbed.
Add the carcasses, cover with
water and cook for 4 hours.
Drain and set aside
Method for the stir fry
Sauté the shallot and leek on a
very low heat. Add the boletus
and tomato, finely chopped and
continue cooking. Sauté the
paprika and add the strands of
saffron. Remove from the pan
and set aside until serving.
Ingredients for the rice
120 g stir fried vegetables
(onion, garlic, etc.)
240 g short grain bomba rice
1l goose stock
150 g goose leg (from recipe
above)
1 Goose breast
tbsp scallion
tbsp Maldon salt
tbsp beetroot
Heat the stock in a pan. Heat
the stir fried vegetables in
a separate pan. When they are
sizzling hot, add the rice,
sauté, pour in the stock and
cook for approx. 13 minutes.
Add the leg, cook for 1 minute,
and then add the beetroot and
scallion –finely chopped.
Leave to stand. Cut the breast
into thin slices and heat.
Serve the rice in a soup dish
and carefully place the slices
of breast, seasoned with a
pinch of Maldon salt, on top.

Established in 1931, the Sociedad Cooperativa Andaluza

(Huelva). Selecciona su materia prima procurando
envasar el producto de campaña, es decir,

aprox. de 10.000 toneladas de pescado, con una
facturación en torno a los 23 millones de euros.
Su producto estrella son los Filetes de Caballa de
Andalucía, los Filetes de Melva y Melva Canutera

Recuerdo la salida del
colegio y la llegada a
la cocina del bar de
mis padres, donde cocían los pucheros
y se elaboraban toda clase de materias
primas, sobre todo el pescado: la cocina
marinera. Coquinas al ajillo, cazón en
amarillo, tollos con tomate, espinetas
de atún con patatas, chocos en su tinta,
atún mechado y pimentón de raya.
Recuerdo los olores de mi pueblo: el
olor a sal mezclado con los olores
desprendidos de las chimeneas de
las fábricas de conservas. Ese olor
inconfundible a pescado azul que
permanece en la memoria (sardinas,
caballas, atún...).
Recuerdo a mi padre y a mi madre
luchando codo con codo para dignificar
su profesión y legarme después toda su
sabiduría para coger yo el testigo.
Intento inculcar ese amor tan grande de
cocinero a mis hijos para hacer de este
modo grande su nombre, hacer centenario
algo que ellos empezaron tanto tiempo
atrás.
El encanto de la cocina de nuestras
abuelas es el tiempo y el cariño que le
ponían a todo lo que guisaban. Lo que
no faltaba nunca en su cocina era el
almirez con su maja donde hacían mágicas
pociones para las comidas.

kitchen of my parent’s restaurant where
they cooked the stews and used all kinds of
ingredients to prepare wonderful things, particularly
traditional fish-based dishes. Coquina clams in garlic,
tope soup with saffron, tope with tomato, tuna with
potatoes, cuttlefish cooked in ink, stuffed tuna, ray with
paprika...
I remember the smells of my village: the smell of salt
mixed with the fumes from the food processing factories.
That unmistakable smell of blue fish which remains etched

I remember my mother and father working side by side in
their chosen profession as they passed all their knowledge
and experience on to me. Now I do my best to pass my

This company, based in Isla Cristina (Huelva),
specialises in salted and tinned fish products.
Their fish are carefully selected for their quality
and tinned within a timescale which guarantees
the preservation of their finest nutritional
properties. The company currently processes
approximately 10,000 tons of fish per year and
generates a turnover of some 23 million euros.
Its leading products are its Andalusia Mackerel
Fillets, its Tuna Fillets, its Bullet Tuna Fillets
and its Tuna Mojama, all of which bear the “Certified
Quality” label. But the company also produces belly
tuna, sardines, Boquerones y Sardinillas de la
Costa (coastal anchovies and sardines) and cod roe,
all preserved in olive or sunflower oil. A natural
product: fish, oil and salt, without any type of
chemical additives or preservatives. Each product

2 ajos
20 grs. de almendras

1 manojo de perejil

Picada
Tostar ligeramente las almendras y los
piñones. Tostar ligeramente las hebras
de azafrán. Picar los ajos. Poner en
un mortero todos los ingredientes de la
picada. Majar y reservar hasta el momento
de su utilización.
Operaciones previas
Limpiar los pulpitos volteando la cabeza
y dejándolos limpios de vísceras.
Elaboración
Hacer el sofrito con los ingredientes
arriba indicados. Añadir los pulpitos y
saltear, añadir fumet de pescado y dejar
cocer. Cuando el pulpito esté casi hecho
añadir las patatas. Poner más fumet si
lo necesitase y dejar hervir hasta que
la patata esté hecha. Poner entonces la
Melva de USISA, añadir la picada y dejar
cocer 4 ó 5 minutos. Rectificar de sal y
pimienta.

350 g baby octopus
600 g potatoes
Stir fried vegetables
50 g onion

Toast the almonds, pine nuts and strands
of saffron lightly. Chop the garlic.
Place all the ingredients in a mortar and

Preliminary procedures
Clean the baby octopus by turning it
upside down and emptying the gut.
Method
Stir fry the vegetables listed above.
Tip in the baby octopus, stir fry, add
the fish fumet and cook. When the octopus
is well cooked add the potatoes. Add more
fumet if necessary and simmer until the
potatoes are tender. Add the USISA Melva,
the crushed, and cook for 4 to 5 minutes.
Season with salt and pepper to taste.

y hoy por hoy tengo que decir

cuenta de la suerte que tengo dedicándome a lo

¼ Aceite de Oliva Virgen Medio
6 dientes de ajo
250 grs. cebolla
250 cc. vino blanco
2 cucharaditas de vinagre de vino
6 huevos
4 grs. de pimienta molida
3 grs. de pimentón dulce
1 gr. de nuez moscada molida
250 cc. fumet de carne
3 latas de Habitas Alsur
1 lata de Espárragos Verdes Alsur
6 hojas de hierbabuena
sal al gusto
Elaboración
Sofreír el ajo y la cebolla bien picada en aceite
de oliva virgen. Cuando estén bien rehogados ir
añadiendo los ingredientes, empezando por las
habitas, el vino blanco y el fumet.
A continuación sazonamos y especiamos con
el pimentón dulce, la nuez moscada y la sal.
Seguimos añadiendo el vinagre de vino y la
hierbabuena. Cuando esté todo bien mezclado
añadiremos los espárragos y terminaremos con los
huevos para escalfarlos.

Salt to taste
Method
Fry the garlic and finely chopped onion in
virgin olive oil until soft. Then add the rest
of the ingredients one by one starting with the
broad beans, the white wine and the fumet.
Season with salt, pepper, a pinch of paprika
and nutmeg. Then add the wine vinegar and mint
leaves. When all the ingredients are well mixed,
add the asparagus and finally crack the eggs
into the pan to poach them.

Recuerdo con especial cariño las
tardes de otoño después de
volver del colegio. Cómo ayudaba
a mi madre y a mi padre en la cocina a preparar
obleas de crepes y cómo, cuando alguna crepe no
salía del todo bien, mi madre nos la espolvoreaba
con azúcar y nos la comíamos todavía caliente.
Hay montones de recuerdos como éste a lo largo de
mi infancia, supongo que algo me habrán marcado a
la hora de elegir mi profesión.
La magia de conseguir preparar platos suculentos
con los ingredientes más humildes del mercado es
el encanto de la cocina de siempre.
I have a particularly fond memory of
the afternoons in the autumn when,
after returning home from school, I
used to help my mother and father in the kitchen
to prepare crepes. When one of the crepes didn’t
turned out as well as it should have, my mother
used to sprinkle it with sugar and we were
allowed to eat it straight away, when it was still
hot. I have many other similar recollections
during my childhood which I suppose have had an
important influence on my choice of profession.
The magic of preparing incredibly delicious
with the humblest ingredients available in the
market, that’s the charm of traditional cuisine.

Elaboración
Mezclar los ingredientes y hornear en moldes
de plum-cake 50 minutos a 160oC. Dejar reposar
y enfriar. Cortar rebanadas de 2 cm. de grosor,
embeber con huevo y leche y freír las torrijas.
Embadurnar con Mermelada de Melocotón La Vieja
Fábrica. Reservar.
Sopa de chocolate blanco
160 grs. de chocolate blanco
200 grs. de nata líquida
150 grs. de yogur natural
Elaboración
Calentar la nata hasta que alcance 83oC.
Introducir el chololate blanco y fundir sin
dejar de remover hasta que se mezcle todo bien.
Una vez frío, añadir el yogur y remover hasta
coseguir una consistencia cremosa y homogénea.
Reservar en frío.
Espuma rellena de frambuesa. Ingredientes:
450 grs. de Mermelada de Frambuesa La Vieja
Fábrica, 150 grs. de agua , 6 unidades de colas de
gelatina , 1l. de solución de alginato.
Elaboración
Pasar por el tamiz la mermelada de frambuesa, de
forma que quede totalmente fina, sin restos de
semillas. Calentar el agua y diluir las colas de
gelatina previamente hidratadas. Mezclar bien
con la mermelada tamizada. Introducir en el
sifón y añadir las cargas de CO2. Reposar mínimo
12 horas en frío.
Preparar las bolas de espuma dentro de la
solución de alginato, de forma que reaccione
durante 1,5 minutos. Enjuagar en agua fría.
Inyectar la mermelada de frambuesa en el centro
de la bola de espuma con ayuda de una jeringa.
Esta última operación es conveniente realizarla
al momento.
Presentación
Montar en plato hondo de presentación. Verter la
base de sopa de choco blanco, disponer la torrija
y colocar encima la espuma rellena de frambuesa
de forma decorativa. Terminar de decorar con las
hierbas frescas, frutos rojos y crujientes.
Method
Mix all the ingredients, pour the mixture into a
plum cake tin and bake for 50 minutes at 160o C.
Leave to cool down. Cut into 2 cm thick slices,
soak in egg and milk and fry. Spread peach jam
over the torrijas.
White chocolate soup
160 g white chocolate
200 g liquid cream
150 g natural yogurt
Method
Heat the cream to 83oC. Add the white chocolate,
melt and stir constantly until well-blended.
Leave to cool down then add the yogurt and mix
well to a smooth, creamy consistency. Store and
chill.
Raspberry foam Ingredients: 450 g La Vieja,
Fábrica Raspberry Jam, 150 g water, 6 jelly
sticks, 1l alginate solution.
Method
Rub the raspberry jam through a sieve to remove
the seeds and give it a thin smooth consistency.
Heat the water and dilute the previously soaked
jelly sticks. Mix well with the sieved jam. Pour
the mixture into a siphon and charge with CO2.
Leave to set in the fridge for a minimum of 12
hours.
Prepare the foam balls inside the alginate
solution so that they react for 1.5 minutes and
rinse in cold water. Inject the raspberry jam
into the centre of the foam ball using a syringe.
This procedure should be performed immediately.
Presentation
Serve in a soup dish. Pour the white cuttlefish
soup base onto the plate, place the torrija
on top and decorate with the raspberry foam.
Complete the decoration with the fresh herbs,
red fruits and top with a croustilllant.

Mis primeros recuerdos de la

Allí se mezclan los recuerdos de mi infancia con
lo olores y sabores de la cocina tradicional,
como la gachamiga, el ajoharina, las sopas,
pucheros y, por supuesto, la matanza.
La cocina de nuestras abuelas era una cocina
hecha con cariño, tiempo y dedicación. Un
acontecimiento familiar. Y las bases que no
deberíamos olvidar en nuestro trabajo diario.
Con los años que llevo en esta profesión he
visto cómo la cocina ha evolucionado mucho y muy
rápidamente.
My first culinary memories
are definitely connected
with “La fonda del Gato”,
a restaurant that my grandparents had
in Santisteban del Puerto (Jaen). It
was the place where the whole family
got together, particularly during
the holidays, and it is there that my
childhood memories mix with the smells
and flavours of traditional dishes
such as Gachamiga, ajoharina, the
soups, the stews and, of course, the
pork sausages and cured meats pre-
pared after the slaughtering of the
pigs.
Our grandmother’s cuisine was one
that required a great amount of
love, time and dedication. It was a
family event and it set the basis for
principles which we should continue
to follow in our daily work.
During the years I have dedicated to
this profession, I have seen how much
and how quickly culinary traditions
have evolved.

Elaboración
Salteamos las galeras y
la cebolleta en un cazo
con un poco de aceite
de oliva. Después
añadimos agua y una
vez que rompa a hervir
añadimos el pescado de
roca y dejamos durante
20 minutos. Escaldamos
las gambas blancas,
colamos y dejamos
enfriar. En ese fumet
cocemos las patatas
nuevas peladas en gajos
y las sacamos.
Montamos la mayonesa
con aceite neutro y
le añadimos aceite de
oliva virgen extra
y limón al gusto.
Calentamos el caldo
sin que rompa a
hervir y le añadimos
la mayonesa poco a
poco, removiendo
con cuidado de que no
hierva, porque si no
se cortaría. Colocamos
el rape en una sartén y
salteamos. Ponemos en
el plato las patatas,

salteado, echándole la

Method
Fish fumet:
Sauté the galeras and
spring onion in a little
olive oil in a pan. Add
water and bring to the
boil. Add the pescado de
roca and simmer for 20
minutes. Blanch the white
prawns, drain and leave to
cool down.
Cook the new potatoes,
peeled and cut into wedges
in the fish fumet and
remove from the pan.
Prepare the mayonnaise
with the neutral oil; add
extra virgin olive oil
and lemon to taste (in
this recipe we highlight
the importance of the
mayonnaise).
Heat the fumet. Do not
bring to the boil. Wisk
in the mayonnaise little
by little, stirring
constantly and making
sure that the fumet
doesn’t boil so as not to
spoil the consistency.
Sauté the monkfish in a
frying pan. Place the
potatoes, prawns and
monkfish on a plate and
pour the soup over it.
Important note: accompany
with well chilled Gran

A mis 60 años aún
recuerdo y tengo
muy presente
aquellos olores que salían por
las ventanas de las casas de
nuestros mayores. Olor a sofrito
para un arroz, aroma a vino fino,
a calamares, a aliños y adobo que
también desprendían las cocinas
de las tabernas.
Recuerdo también los días fríos
y lluviosos de invierno, cuando
al llegar a casa la lumbre estaba
encendida y a fuego lento hervía
un puchero, unas patatas con
bacalao, un cocido, una buena
sopa de ajo, unas migas con sus
torreznos... No digo que hoy
en día haya menos cariño en la
cocina, pero antes no eran tan
comunes las ollas rápidas, ni
había microondas, vitrocerámica
ni otros utensilios que aportan
rapidez y comodidad, pero quizás
hayan restado toque personal.
La primera cocina en la que
trabajé era de leña y todo era
más autóctono y natural.
El encanto de la cocina
tradicional era la materia
prima, el aliño adecuado y mucho
cariño para cocinar.
Although I’m now 60 I still remember those
smells that came out of the windows of our
elders’ houses. The smell of the fried
tomatoes, peppers, onion and garlic used to prepare a rice
dish, the aroma of a Fino sherry, or of squid, and the smell
of the dressings from the kitchens of the taverns.
I also remember how when we got home on a cold rainy winter
day there would be fire with a stew, a cod and potato
casserole, a delicious garlic soup, or polenta with chorizo
and torreznos cooking slowly on it... I’m not saying that
there is no love and dedication in today’s cuisine but it’s
certainly true that pressure cookers were not common, and
there were no microwaves or ceramic hobs or other utensils
which make cooking faster and easier but have perhaps
lessened that personal touch. In the first kitchen I worked
in there was a wood-burning stove and everything was more
basic and natural.
The charm of traditional cuisine lies in the ingredients,
the right dressing, and love and dedication.

1 copa de Vino PX Alvear 1927

1 hoja de laurel

½ l. de caldo de carne

Elaboración
Limpiar las carrilleras de piel y fibra y
marcarlas con unos cortes. Picar la cebolla y
el ajo y pochar. Añadir la carne y rehogar. A
continuación añadir el PX Alvear, el caldo y el
azafrán. Salpimentar y cocer hasta que la carne
esté tierna. Acompañar con unas patatas Puente
Nuevo.

½ l meat stock

Method
Clean the cheeks and remove the skin and fibre.
Mark with a few cuts. Chop the onion and garlic
and stir fry. Add the meat, stir fry, pour in
the PX Alvear and the stock and add the saffron.
Season with salt and pepper and cook until
the meat is tender. Garnish with Puente Nuevo
potatoes.

Recuerdo esos días en casa de mis
padres en Facinas (Cádiz), mi
pueblo. Desde el primer momento
en el que te levantabas había un olor a puchero
y a potaje, no sólo en la cocina, sino en toda
la casa. Las paredes llorando, los cristales
empañados. La música de la olla express, que cada
vez se usa menos.
Luego cuando venía mi familia (tíos, primos)
sólo decían que querían comer la comida de Tía
María (mi madre): potaje, caracoles, bizcocho,
etc. Fue entonces cuando comprendí que yo quería
hacer feliz a los demás y que todo el mundo
disfrutara, como veía en mi casa: Cocinando.
Poniendo en todo esto el cariño que mi madre me
ha inculcado.
El encanto de la cocina de antaño es la
delicadeza y el cariño que le ponían y le ponen.

ConsorCio de Jabugo Pork CHeeks in CasTilian sTyle sauCe
Ingredients
1 kg Consorcio de Jabugo pork
cheeks
1 kg onions
½ kg mushrooms
3 cloves of garlic
250 g ham
½ l demiglas
½ l white wine
250 g carrot
½ + l water
Extrta Virgin Olive Oil
salt
Pepper
Method
Season the cheeks with salt and
pepper. Brown the pork cheeks
(with the fat removed) in a
frying pan or deep pan with a
good glug of olive oil and set
aside. Stir fry the onion,
garlic and carrot in the same
oil. When the vegetables are
tender, add the pork cheeks,
pour in the wine and season
with salt to taste.
Stir fry the rest of the
onion with the mushrooms in
a separate pan. Add the wine
and demiglas. When all the
ingredients are tender and the
liquid is absorbed, add the
ham, cut into strips.
Presentation
Drain the pork cheeks,
transfer onto a plate, and
pour the Castilian style sauce
(mushrooms with ham) over
the meat. Decorate with thin
slices of ham and garnish with
an aromatic herb (rosemary,
thyme, basil...).

1 kg. de Carrillada de Consorcio de Jabugo
1 kg. cebollas
½ kg. de champiñones
3 dientes de ajos
250 grs. jamón
½ l. demiglacé
½ l. vino blanco
250 grs. zanahoria
½ + l. agua
Aceite de oliva Virgen Extra
sal
pimienta
Elaboración
Salpimentamos la carrillada. Sellamos la carrillada
ya limpia de grasas en una sartén u olla en la que se
vaya a guisar la carne, con un buen chorro de aceite de
oliva. Reservamos la carne a continuación en el aceite.
Rehogamos la cebolla, el ajo y la zanahoria. Cuando la
verdura esté tierna y rehogada echamos la carrillada, el
vino y rectificamos de sal.
En otra sartén rehogamos el resto de cebolla y champiñones
con el resto del vino y la demiglacé. Cuando tengamos todo
tierno y reducido echamos el jamón en tiras.
Montaje
Sacamos la carrillada. Una vez escurrida la salseamos con
la castellana (los champiñones con el jamón). Decoramos
con lonchas finas de jamón y alguna hierba aromática
(romero, tomillo, albahaca...).

Levantarse temprano, ir al mercado.
No hay lo esperado, ayer saltó el
Levante. Hoy toca improvisar,
comprar sobre la marcha, visualizar el menú con los
gustos de cada uno y corriendo para casa.
Le pone todo el cariño, piensa en todos... esto les va
a encantar y... ¡manos a la masa! Preparar, poner al
fuego y a pensar en otras labores ¡qué habilidad!, así
todos los días, sin uno solo de descanso, y siempre a
su hora.
Vamos llegando, cómo huele ya desde la escalera. Todos
a la mesa y a comer; ser agradecido es de bien nacido,
pero nadie dice ¡qué bueno está!, y eso a ella no le
importa cuando ve que los platos quedan rebañados.
Ahora, por tu dedicación y cariño sí que te lo
agradezco. Me sirve de sustento en el día a día

a question of improvising, buying whatever
one can find, concocting a menu which is to
everyone’s taste and rushing back home.
You have to do it with passion, thinking of
everyone... They’re going to love this, so
let’s get on with it! Prepare everything
and start cooking whilst at the same time
thinking of all the other things that need
doing, what a talent! And it’s like that
all the time without a single day off, and
always on time.
We’re all arriving and it smells wonderful
as we climb the stairs, everyone sits at the
table to eat. It’s polite to be grateful or
appreciative, but no-one says this tastes
really good! But she doesn’t mind when she
sees that there’s nothing left and all the
plates are empty.

allowed me to learn the profession which is
today my form of livelihood. I would also

Ingredientes
1 litro de caldo de puchero
500 grs. de tomate maduro
1 cebolla
2 pimientos verdes
4 dientes de ajo
1 hoja de laurel
4 huevos
400 grs. de Arroz Sabroz Brillante
1 rama de hierbabuena
Aceite de Oliva Virgen Extra
Preparación
Hacer un refrito con las verduras (ajo, cebolla,
tomate en dados y la mitad del pimiento) y añadir
el arroz y el laurel. Mojar con el caldo de
puchero y dejar que el arroz se quede en el punto
deseado. Sazonar el guiso y añadir unas hojas de
hierbabuena.
En una sartén aparte añadir aceite y freír los
huevos. Cortar el pimiento en tiras y freír en
el aceite que hemos utilizado para los huevos.
Por último, pasaremos el arroz a una cazuela de
barro o de porcelana y ponemos encima el huevo
y las tiras de pimiento frito con las hojas de
hierbabuena.
Ingredients
1 litre stock from a casserole dish
500 g ripe tomatoes
1 onion
2 green peppers
4 cloves of garlic
1 bay leaf
4 eggs
400 g of Sabroz Brillante Rice
1 bunch of mint
Extra Virgin Olive Oil
Method
Fry the vegetables (garlic, onion, diced
tomatoes, and half the pepper) add the rice
and the bay leaf. Cover with stock from a
casserole dish and cook the rice to the desired
consistency. Season with salt and add a few mint
leaves.
Fry the eggs in oil in a separate frying pan. Cut
the peppers into thin strips and fry them in the
oil used to fry the eggs. Finally, transfer the
rice to an earthenware or ceramic pot and place
the egg on top together with the pepper strips
and mint leaves.

La cocina ha estado muy vinculada a mi
vida desde que tengo uso de razón, y
casi siempre en mi pueblo en Pujerra
(Málaga) con mis abuelos, tanto maternos como
paternos, y siempre alrededor de una mesa.
Nos colocábamos como podíamos 15 ó 20 personas
y mis abuelas siempre eran las anfitrionas.
Gracias a ellas siempre nos reuníamos y entre
todos echábamos una mano para preparar la
comida. Me acuerdo de mi abuela haciendo
una ensalada muy simple pero muy buena y
refrescante, con lechuga, tomate, cebolla,
limón, aceite de oliva y un buen chorreón de agua
del grifo.
O cuando estábamos comiendo y llegaba la vecina
con un gallo y lo sacrificaban delante nuestra
para hacer el puchero, y allí mismo lo pelaban,
algo rutinario para ellas. Siempre metidas en
la cocina, preparando de comer con lo que el
campo les daba y lo que compraban en las pequeñas
tiendas que había en el pueblo... y me faltaría
papel y tinta para recordar, pero siempre
alrededor de una mesa con la familia, amigos y
muchas risas y muy buenos recuerdos.
A diferencia de los tiempos que corren de
estrés, poco o nulo tiempo para cocinar,
nuestras abuelas se dedicaban única y
exclusivamente a sacar adelante una familia y
a alimentarla, por lo que le dedicaban muchas
horas y mucho cariño a la cocina y, sobre todo,
utilizaban los productos que su pequeño terreno
les producía y eso se notaba en el resultado
final.

Cooking has been part of my life for
as long as I can remember, and
my recollections are nearly all
associated with the village where I come from,
Pujerra in Malaga, with my grandparents from both
sides of the family, all of us sitting around a
table.
We were perhaps 15 or 20 people and we sat down
the best we could, always with my grandmothers as
hosts. It was thanks to them that the whole family
got together and we all helped to prepare the food.
I remember my grandmother making a simple but
wonderfully refreshing salad with lettuce, tomato,
onion, lemon, olive oil and plenty of water from
the tap.
Or when we were eating and a neighbour came in with
a chicken, and they killed it in front of us to make
a casserole. They plucked it right then and there –
it was just something natural for them. They always
seemed to be in the kitchen, preparing a meal from
whatever the land had given them, or buying a few
things from the local village shop… I would have to
write endlessly to list all my memories... always
around the meal table with family, friends, plenty
of laughter and fond memories.
It was so different to today’s life, with all
its stress and barely any time to cook. Our
grandmothers dedicated their whole lives to
bringing up a family and feeding them, which is why
they spent so much time and energy in the kitchen,
using whatever ingredients their bit of land
provided. And you could really taste it in the final
result.

Ingredientes
1 kg. calabaza
1 pimiento rojo
1 cebolla
1 ñora
3 dientes de ajo
300 grs. bacalao
perejil
laurel
Vinagre de Jerez Ybarra
Aceite de Oliva Virgen Extra
sal
Elaboración
En primer lugar, poner en remojo con agua
caliente la ñora y cuando esté blanda le
sacaremos la pulpa. Cortar en brunoise el
pimiento rojo y la cebolla. Rehogar en aceite
de oliva sin que coja color, cuando esté blando
incorporar la pulpa de la ñora.
Mientras se va haciendo, retiramos a la calabaza
la cáscara, las hebras y las pepitas, cortaremos
en dados y mezclamos el sofrito anterior con la
hoja de laurel y un diente de ajo picado. Rehogar
unos 40 minutos a fuego medio, cuando pierda
todo el jugo añadir el resto de los ajos picados,
sofreír y verter un buen chorreón de Vinagre de
Jerez.
Terminar de cocer hasta que se evapore el
vinagre y, por último, añadir un buen puñado
de perejil bien picado. Reservar y rectificar
de sal. Desmenuzamos el bacalao ya desalado
y aliñamos con un poco de aceite de oliva.
Colocaremos sobre la calabaza frita.
Ingredients
1 kg pumpkin
1 red pepper
1 onion
1 ñora pepper
3 cloves of garlic
300 g of cod
Parsley
Bay leaf
Ybarra sherry vinegar
Extra Virgin Olive Oil
salt
Method
Firstly, soak the ñora in hot water to soften it
and remove the pulp. Stir fry the brunoise cut
red pepper and onion in olive oil until tender
but not brown, then add the ñora pulp.
While the ñora is cooking, peel the pumpkin,
scoop out the fibrous bits and seeds, and cut it
into dices. Tip the pumpkin into the frying pan,
stir well, and add the bay leaf and a clove of
garlic, chopped. Stir fry for approx. 40 minutes
over low heat; when the liquid has almost
evaporated add the rest of the garlic and pour in
a good splash of sherry vinegar.
Continue cooking until the vinegar evaporates
and garnish with a bunch of finely chopped
parsley. Season with salt and set aside.
Flake the cod – previously unsalted – dress with
a little olive oil and place the fried pumpkin on
top.

Llegaba a casa del cole y si había

olía por todos los descansillos
de las escaleras. Previamente nos habían puesto
por la mañana pan frito mojado en leche para
desayunar. Recuerdo esas tardes, muy pequeño
aún, liando croquetas con dos cucharitas, esas
masas finas de bechamel con las sobras del
puchero de la mañana o del día antes...
El encanto de la cocina de las abuelas es que
eran sabores de verdad, sin distorsiones,
utilizando esos géneros de antaño.

almost taste them as you climbed the stairs.
Earlier, we would have had fried bread soaked
in milk for breakfast. I remember how in the
afternoons, with the help of two small spoons,
I used to make croquettes using fine béchamel
sauce and bits of meat left over from the stew we
had eaten that day or the day before...

600 grs. de alubias
1 tomate
2 cebollas
1 cabeza de ajo
500 grs. de almejas
3 latas de Langostillos de Ubago
fumet de pescado
Aceite de Oliva Virgen Extra
Elaboración
Dejando las alubias en remojo la noche antes,
cocer con la cabeza de ajo, tostándola antes
para que le dé un pequeño sabor ahumado, una
cebolla y aceite de oliva. A la vez se hace un
sofrito de ajo, cebolla y tomate, pero pelado y
sin pepitas el cual apartamos una vez que está
bien pochado. Se abren las almejas con un poco de
aceite de oliva y, opcional con un dedo de vino
blanco, reservamos.
Incorporamos el jugo de los Langostillos
de Ubago, previamente colado, junto con el
resultante de cocer las almejas y trituramos con
la turmix para que esté bien fino el sofrito.
Añadimos un poco de fumet de pescado y las
alubias ya cocidas para darle un hervor con las
almejas y algunos Langostillos troceados.
Los Langostillos los marcamos someramente a la
plancha para potenciar el sabor. Reservamos
alguno para decorar al final. Presentamos en
un tazón o plato hondo o sopero viéndose las
almejas y langostillos marcados a la plancha.
De manera opcional se puede rematar con una
pipirrana por encima.

600 g haricot beans
1 tomato
2 onions
Bulb of garlic
500 g clams
Ubago Langostillos, 3 tins
fish fumet
Extra Virgin Olive Oil
Method
Soak the beans overnight. Cook with the garlic
(toasted previously to give it a slightly smoked
flavour), an onion and olive oil. Meanwhile,
stir fry the garlic, onion and tomato – peeled,
deseeded. Remove the tomato when soft. Heat the
clams in a little olive oil or in a finger of
wine to open them. Set aside.
Whiz the stirred fry vegetables, the water from
both the Langostillos de Ubago and the cooked
clams in a blender to a fine texture. Add a
little fish fumet and the cooked beans. Add the
clams, a few Langostillos cut into pieces and
bring to the boil.
Brown the Langostillos lightly on the grill to
enhance their flavour and reserve a few for the
final decoration. Serve in a bowl or soup dish
and with the grilled clams and langostillos on
top. Alternatively, top with a bit of pipirrana
salad.

En la fértil y milenaria Vega de Granada se
encuentra una joya gastronómica: “El Espárrago de
Huétor Tájar”. Esta zona es pionera en el cultivo
de esta hortaliza, ya que convergen los factores
agroclimáticos idóneos para su producción.
Las tradicionales prácticas de cultivo y
recolección, la manipulación y el transporte
se realiza en un periodo inferior a 24h,
garantizando al consumidor la máxima frescura y
calidad. Se identifican por una contraetiqueta
numerada y expedida por el Consejo Regulador que
garantiza el origen y la calidad.
La temporada de recolección de espárrago fresco
abarca los meses de marzo a junio. No obstante,
parte del producto es conservado al natural y en
aceite de Oliva Virgen Extra, para que se pueda
consumir todo el año.
El Espárrago Triguero de Huétor Tájar se
distingue de cualquier otro por su porte más
recto y delgado, sus tonos más oscuros (bronces,
morados y verde-morados). Posee un intenso sabor
amargo dulce, un profundo aroma y una textura
firme y carnosa. Además tiene gran capacidad de
integración en platos de distinta estructura y
composición por sus matices culinarios, que le

Mi mejor recuerdo, o el que
más añoro, son los dulces de
mi abuela. El motivo no es
sólo por los sabores dulces que tanto
gustan en la infancia, sino también por
lo meticulosa que era mi abuela en su
preparación y el cariño que ponía en ello.
Los hacía en el horno de leña del pueblo
y allí pasaba toda la mañana preparando
los dulces. Tanto yo como mis hermanas
esperábamos en casa que llegara con
los dulces recién hechos. En general,
recuerdo el buen toque que conseguía en
todos sus guisos, toques que busco lograr
hoy día en los míos.
El encanto de aquella cocina era, sin
duda, su capacidad para adaptarse a los
productos a los que tenían acceso y cómo
buscaban siempre ofrecer lo mejor dentro
de sus posibilidades. También el esmero
que ponían en cocinar, cosa que hoy día se
está perdiendo por la falta de tiempo.

memory are the cakes baked by my

was a child, but also because my grandmother
made them with particular love and care.
She used to bake them in the wood-burning
oven in the village, spending all morning
preparing them. My sisters and I waited
eagerly at home for the arrival of the

remember how she gave that special touch to
everything she cooked and this is something
which I try to emulate today.
The charm of that cuisine was without doubt
its capacity to adapt to whatever products

with its ideal combination of agro-climatic

the “Espárrago de Huétor Tájar”. This type of wild
endemic asparagus is now grown on a large scale in
the area, which has pioneered the cultivation of
this vegetable.
The traditional cultivation, picking, handling
and transportation procedures are carried out
within 24 hours, thereby guaranteeing that the
final product meets the highest standards in
terms of freshness and quality. Are identified
by a numbered back label issued by the Regulatory
Council which guarantees their origin and quality.
The harvest season for fresh asparagus takes
place between March and June, although part of the

½ kg. de Espárragos de Cesurca
partidos
5 grs. de sal
4 cucharadas de Aceite de Oliva
Virgen Extra
40 grs. de almendras
2 rebanadas de pan
1 huevo
1 vaso de agua
Elaboración
Se fríen los Espárragos de
Cesurca en una sartén. Una vez
fritos se sacan y se echan en una
cacerola. En el mismo aceite se
fríen las almendras, el pan y el
ajo.
Una vez fritos se trituran con
un poco de agua y se le añade a
los espárragos anteriormente
apartados. Se le termina de
añadir el agua restante, la sal,
y se deja hervir hasta que los
espárragos queden tiernos. En
el último momento se le añade
el huevo crudo y se mezcla todo
durante un minuto y listo para
servir.

5 g salt.
4 spoonfuls Extra Virgin Olive
Oil
40 g almonds
2 slices of bread
1 egg
1 glass of water
Method
Fry the Cesurca Asparagus in a
frying pan. Remove from the pan
and place in a deep pan. Fry the
almonds, bread and garlic in the
same oil.
Process in a blender with a little
water. Add the asparagus. Add
the remaining water, the salt,
and simmer until the asparagus
are tender. Then break the egg
into the mixture, mix well for a
minute and serve.

cariñosa que seguimos queriendo, gracias a

cocinaban.
I remember how my granmother from
my father’s side of the family
– who was a really devoted woman
and a true vocational artist – used to ask
us at tea time whether we wanted toast with
lard seasoned with parpika or butter. I also
have fond memories of the vegetable soup
made by my mother’s mother, a good-hearted
and generous woman who is also incredibly
sensitive and affectionate. She’s still
alive and we all love her dearly...

Mis recuerdos son tantos... la
sopa cachorreña de mi abuela,
el flan de huevo, el olor a
clavo del jarrete guisado o aquella sopa de
pescado que comíamos en Navidad.
Los filetitos con ajo y los pimientos fritos
de la prima Lola en el patio, con el ventilador
puesto en pleno verano. Recordaré al Tatá
siempre haciendo tortillas de papas para el
bar o cortando frutas para la sangría con una
velocidad endiablada y, por supuesto, el cocido
de acelgas de mi madre cuando llegué de Canarias
en el mes de julio... ¡sudé la gota gorda!
Yo hago una cocina con rasgos muy andaluces,
pero buscando nuevas técnicas e intentando
siempre innovar, sin olvidar nunca la base de
nuestra cocina, lo tradicional, porque sin eso
no se puede partir de nada.
Bueno... como casi todos decimos, como un guiso
de una abuela ninguno ¡Ni siquiera nuestras
madres llegan a bordarlo como ellas lo hacían!
Todo ese encanto comienza desde esas cocinas
antiguas con fuegos (dejemos a un lado las
vitrocerámicas) aquellas cacerolas antiguas
de colores y esas manos desgastadas que se

I have so many memories...

beef casserole, or the fish soup we ate

The pork fillets with garlic, the
fried peppers on my cousin Lola’s
patio, with the cool air of the fan in
the heat of the summer. I remember the
Tatá always making Spanish omelette
for the bar or cutting fruit for the
sangria at an incredible speed, and of
course, my mother’s chard stew when I
got home from the Canaries in july...
¡I sweated buckets!
The way I cook is based on time-
honoured Andalusian recipes, but I’m
always looking for new techniques and
trying to innovate, although I never
forget the essence of the cuisine, the
tradition, because without it you’ve
got no point of reference.
Well... as we were all saying, there’s
nothing like your grandmother’s stew.
And not even our mothers manage to do
as well as them! Never mind ceramic
hobs, all of the charm came from those
traditional kitchens with their old
fashioned stoves, the traditional
coloured casserole dishes, and those
worn out hands which still moved with
a sweetness and delicacy which will
always remain etched on my memory.

Elaboración
Limpiamos el chipirón quitando la piel y las
patas, reservándolas para más adelante.
Preparamos un fondo con el Aceite de Oliva
Virgen Extra Ybarra y los ajos laminados, los
doramos y agregamos la cebolla y la zanahoria
previamente picadas en brunoise, agregamos
el tomate cortado en dados y añadimos el
vino blanco o jerez. Dejamos reducir hasta
eliminar el alcohol.
Pelamos las gambas y reservamos. Con las
cáscaras hacemos un fumet y trituramos la
salsa para después pasarla por un chino.
Agregamos el caldo anterior y reservamos.
Troceamos las patas del chipirón reservadas
anteriormente, las salteamos y agregamos dos
huevos cocidos picados. Picamos el perejil
y preparamos un ligazón con un poco de pan
rallado y un huevo. Agregamos el jamón a tacos
y ligamos todo hasta homogeneizar. Este será
el relleno del chipirón.
A la hora de rellenar el chipirón, se va
introduciendo el relleno poco a poco mientras
se va girando éste, el cual quedará cerrado a
la hora de cocinarlo. Podemos cerrarlos con un
palillo para evitar que se abran.
Agregar los chipirones a la salsa anterior
rectificando con un poco de caldo hasta que
queden tiernos. Cuando estén se agregan las
gambas que previamente habíamos pelado.
Method
Wash the cuttlefish, remove the skin and
tentacles and set them aside to use later.
Heat the Ybarra Extra Virgin Olive Oil in a
pan and fry the garlic, cut into slices, until
golden brown. Stir in the brunoise cut onion
and carrot. Add the tomato, diced, pour in the
white wine or sherry. Reduce until the alcohol
has evaporated completely.
Peel the prawns and set aside. Use the shells
of the prawns to make a fumet. Process the sauce
and pass it through a conical strainer. Add the
stock and set aside.
Cut the cuttlefish tentacles into small
pieces, stir fry them and add the hardboiled
eggs, chopped. Chop the parsley, use egg and
breadcrumb to bind the mixture, and add the
diced ham. This will be the stuffing.
Gradually fill the cuttlefish with the stuffing
while rolling them up and secure the ends with
toothpicks before cooking to prevent them from
opening.
Add the sauce, pour in the fumet, cook until the
cuttlefish are tender and then add the peeled
prawns.

de patatas.

Ingredientes
1 pierna de carne de cordero
4 cucharadas de Miel de Azahar de Sevilla Doray
4 cebollas
3 cabezas de ajo
Aceite de Oliva Virgen Extra c/s
½ vaso de vino oloroso
½ vaso de cerveza
2 ramitas de tomillo
2 ramitas de romero
1 hoja de laurel
sal c/s
pimienta negra molida c/s
80 grs. de pan de pueblo
Elaboración
Comenzaremos esta receta deshuesando la pierna
de cordero. La carne obtenida la cortaremos
en dados gruesos. Los huesos los doraremos en
una cacerola aparte del guiso, junto con las
cabezas de ajos y unos cachelos de cebolla.
Cuando tengan un tono tostado procederemos a
cubrir de agua, dejando reducir su volumen a una
tercera parte.
En otra olla doraremos el cordero previamente
salpimentado, así conservará todos sus jugos.
Reservamos una vez dorado y seguidamente
fondeamos los ajos machacados junto con la
cebolla cortada muy pequeñita.
Con las hierbas aromáticas haremos un atadillo
(tomillo, romero y laurel) ayudándonos con
una hoja de puerro y cuerda de bridar y se
lo añadimos al sofrito, así conseguiremos
retirarlas una vez aporten el aroma deseado.
Añadimos el cordero a la cebolla y al ajo, lo
rehogamos durante unos minutos y añadimos el
vino oloroso y la cerveza. Lo reducimos hasta
que pierda todo su alcohol y agregamos el caldo
de cordero. Dejaremos cocer a fuego lento
hasta conseguir que la carne quede tierna y
jugosa. Para terminar añadiremos un majado de
ajos fritos, pan frito y Miel Doray de Azahar.
El guiso debe quedar ligado y con brillo.
Rectificamos de sal y de miel.

Ingredients
1 leg of lamb
4 spoonfuls of Honey Doray Azahar de Sevilla
4 onions
3 bulbs of garlic
Tbsp Exra Vigen Olive Oil
½ glass of oloroso sherry
½ glass of beer
2 sprigs of thyme
2 sprigs of rosemary
1 bay leaf
Tbsp salt
Tbsp ground black pepper
80 g country loaf, sliced
Method
Debone the leg of lamb and cut the meet into
thick dices. Brown the bones with the garlic
and some onion until browned in a separate pan.
Cover with water and reduce by a third.
Brown the lamb, previously seasoned with salt
and pepper so that it conserves all its juices,
in a separate pan. When golden brown, set aside.
Stir in the crushed garlic with the onion,
finely chopped.
Wrap the herbs (thyme, rosemary and a bay leaf)
in the leaf of a leak tied with some cooking
string and add to the stir fry. Remove when the
mix has absorbed the desired flavour and aroma.
Add the lamb to the garlic and onion, stir fry
for a several minutes, and then pour in the
Oloroso and the beer. Reduce until the alcohol
is fully evaporated and add the lamb stock. Cook
on a low heat until the meat is tender and juicy.
Garnish with crushed garlic, fried bread and
honey Doray azahar de Sevilla. The casserole
must be well bound and smooth. Season with salt
and honey.

Jamones Lazo
Los recuerdos que me vienen a la
cabeza cuando rememoro esos
momentos en los que uno descubre
los sabores, olores y texturas de los alimentos
siempre van unidos a mi madre y a mi abuela.
Siempre fue una fuente inagotable de experiencias
y momentos inolvidables para un niño curioso como
era yo. Momentos memorables, como cuando mi madre
hacía natillas y dejaba a un lado la cacerola
donde las había hecho y yo me dedicaba incansable
a rebañar con trozos de galletas los restos de
natillas calientes pegados en las paredes de la
cacerola.
Y también el de mis primeros trabajos en la cocina,
encargados por mi abuela, que me ponía a limpiar
hebras a las judías verdes o las hojas fibrosas de
las alcachofas con las que aprendí a distinguir el
sabor amargo al llevar los dedos a mi boca después
de limpiarlas y cómo no, el primer corte en un dedo
por hacer las cosas apresuradamente.
Sin duda todas estas cosas han influido en mi
decisión de dedicarme a esta profesión, ya que
todo empezó siendo un juego para mí y todavía me
sigue divirtiendo mucho. Una de las cosas que más
me gustaba los sábados de lluvia era cuando mi
madre intentaba recordar algunas de las recetas
de postres de mi abuela, que como no sabía leer ni
escribir sólo podía transmitir realizándolas. Por
eso algunas veces era un dulce maravilloso el que
conseguíamos y otras sólo podíamos alegrarnos de
haber pasado el día entretenidos.
El encanto de la cocina de nuestras abuelas
estaba en la extrema complejidad que tenían los
aparentemente sencillos guisos y potajes y la
dedicación que se le daba a esas elaboraciones.
The memories which come to mind when
I think back to the time when one
I was discovering the flavours,
smells and textures of the ingredients are always
associated with my mother and grandmother. They
were always an endless source of experiences
and unforgettable times for a curious child like
myself. Memorable moments such as when my mother
was making custard and she left the bowl to one side
and I got little pieces of biscuit to scrape the
delicious warm remains off the sides of the bowl.
Then there were my first jobs in the kitchen,
helping my grandmother, remove the stringy sides
of the runner beans or the fibrous leaves of the
artichokes. After cleaning them I used to lick
my fingers and that’s how I began to recognise
their distinctively bitter taste and I also got
the first cuts in my fingers when I did things in a
hurried and careless manner.
Without doubt these early experiences were a big
influence on my decision to dedicate myself to the
culinary profession, especially as it all started
as a kind of game and is still something that I
enjoy enormously. I particularly remember those
rainy Saturdays when my mother tried to remember
some of my grandmother’s pudding recipes, which
she had to do by trial and error because my grandma
couldn’t read or write, so sometimes they turned
out perfectly but on other occasions we just had
to be content with having passed an agreeable
afternoon.
The charm of our grandmothers’ cuisine lay in the
fact that what seemed like quite simple stews and
casseroles were actually very complex in their own
way. They were cooked for hours over a slow fire
using the basic ingredients which were at hand
to create wonderfully delicious and spectacular
dishes. I still feel that the marvellous simplicity
of those recipes is something that
we haven’t really appreciated.

4 kg veal giblets, 3 pig’s trotters, 1 leg of
veal, 200 g Lazo Ibérico Ham , 200 g Lazo Ibérico
Chorizo, 80 g manteca colorá (pork lard seasoned
with paprika), 25 g paprika,3 chilli,150 g onion,
150 g tomato, a few leaves of mint, 12 peppercorns,
100 g potatoes in chunks, 20 g bone Lazo Ibérico
Ham, 3 bulbs of garlic and salt.
Method
Wash the giblets and trotters. Place the leg and
trotters in a pan along with the giblets – cut
into pieces and cooked previously in water for 10
minutes with a splash of vinegar.
Add the tomato and onion, brunoise cut, along with
the bulbs of garlic, cut lengthways. Season with
the spices, and then add the manteca colorá, the
Lazo cured meat and the bone of Lazo Ibérico ham.
Cook on a medium heat, bring to the boil and simmer
on a low heat. Skim the froth and impurities from
the cooking liquid and continue cooking for 3 and
a half hours. Season with salt and simmer for a
further 3 and a half hours – alternatively cook in
a pressure cooker for an hour and fifteen minutes
– then add the potatoes. Cook until tender and add
the mint leaves at the last minute.
Ingredientes
4 kg. de menudo de ternera, 3 manos de
cerdo, 1 mano de ternera, 200 grs. de Jamon
Ibérico Lazo, 200 grs. de Chorizo Ibérico
Lazo, 80 grs. de manteca colorá, 25 grs. de
pimentón dulce, 3 guindillas, 150 grs. de
cebolla,150 grs. de tomate, un manojito de
hierbabuena,12 granos de pimienta, 100 grs.
de patatas en cachelos, 20 grs. de Rancio de
Jamón Ibérico Lazo, 3 cabezas de ajo y sal a
punto.
Elaboración
Una vez limpios el menudo y las manos los
depositamos en la olla de la siguiente
manera: en el fondo ponemos la mano de
ternera, las manitas de cerdo y el menudo
troceado, escaldado y cocido previamente en
agua y un chorro de vinagre durante unos 10
minutos.
Luego colocamos sobre éste el tomate
y la cebolla picados en brunoise y las
cabezas de ajo cortadas transversalmente.
Introducimos las especias y la manteca
colorá y por último la chacina Lazo troceada
en rondeles y en tacos, así como el rancio de
Jamón Ibérico Lazo.
Colocamos sobre el fuego y en cuanto rompa a
hervir bajamos a fuego lento, desespumamos
muy bien de impurezas el caldo y lo
sazonamos. A continuación cocemos
sobre unas tres horas y media o por
el contrario usamos una olla
a presión durante una hora
y quince minutos,
tras lo cual añadiremos
las patatas hasta su
cocción y en el
último momento
la hierbabuena.

Hay dos momentos especiales en mi
memoria, uno en verano y otro
en invierno. Los veranos los
recuerdo con bañador metido en la cocina ayudando
a mi madre a hacer gazpacho. Todas las manos
pringadas de tomate. El olor a ajo, la paciencia
al colarlo y sobre todo, escuchar el comentario de
mi padre. Para él siempre estaba bueno.
Otros momentos muy especiales eran en invierno.
Casi todos los sábados hacíamos churros por las
tardes. Eran momentos en los que la cocina unía
a la familia para ayudar a mover la masa durante
mucho tiempo. Mi madre decía que cuanto más tienpo
se le dedicara a la masa, más buenos estaban los
churros.
El encanto especial que tenía la comida de nuestra
madre o abuela era simplemente la dedicación.
There are two special moments in
my memory: the summers and the
winters. I recall spending most
of my summers in my swimming trunks, helping my
mother to prepare gazpacho, my hands soiled with
tomato. The smell of garlic, the patience with which
I drained the soup and my father’s appreciative
comments. For him, it was always delicious.
The winters also had their special moments, mostly
on Saturdays when we used to make churros in the
afternoons. On those days the whole family got
together to help knead the dough for hours. My
mother used to say that the longer the time dedicated
to the dough, the more delicious the churros.
The special charm of our mother’s or grandmother’s
food lies simply in the amount of time they
dedicated to it.

Grupo Caballero
El Grupo Caballero fue fundado en 1830.
Tiene su sede principal en El Puerto de Santa
María y cuenta también con bodegas en Jerez
de la Frontera -donde está radicada Lustau-
e instalaciones en Cazalla de la Sierra,
dedicadas a la elaboración de la Crema de
Guindas Miura.
Su producción se enfoca fundamentalmente en el
conocido Ponche Caballero y los vodkas de la
gama Sildka, en los vinos de Jerez –destacando
los Fino La Ina y Pavón más la gama Lustau- ,
brandies –Decano, Milenario y Señor Lustau- y
Vinagres de Jerez.
El Grupo Caballero se ha convertido en el
principal valedor de los Vinos de Jerez y la
Manzanilla de Sanlúcar, como lo demuestra
la apuesta que en los últimos años ha hecho
adquiriendo Lustau y la gama La Ina, que hace
poco se ha visto completada con la Manzanilla
Macarena y el Cream Candela.
La Ina fue fundada en 1919 y desde hace dos
años pertenece al Grupo Caballero, que
desde entonces se encarga de su producción y
comercialización. Se trata de un fino seco
y de marcada personalidad en boca, donde
muestra un largo final. En nariz es punzante
y denota aromas almendrados. Servido frío es
el perfecto compañero de jamón ibérico y de
pescados, así como de sushi y sashimi.
The Grupo Caballero was founded in 1830.
Its headquarters are in El Puerto de Santa
María and it also has wineries in Jerez
de la Frontera, where Lustau is located,
and installations in Cazalla de la Sierra,
dedicated to the production of Crema de Guindas
Miura.
Their production is fundamentally focused
on the well-known Ponche Caballero and the
Sildka range of vodka, wine from Jerez, in
which the fine wines La Ina and Pavón and the

La Ina was founded in 1919 and for two years has
belonged to Grupo Caballero, which since then
has taken on its production and marketing.
It is a fine dry wine that has a notable
personality in the mouth, where it leaves a
long aftertaste. It has a biting scent that
denotes almond aromas. Served cold, it is the
perfect companion for Iberian ham and fish as
well as sushi and sashimi.

Elaboración
Lo más importante es elegir una buena materia
prima. Por ello, las alcachofas hay que
seleccionarlas una a una para comprobar
la dureza y el estado de madurez. Una vez
seleccionadas, se pelan generosamente y se
cortan por la parte alta, hasta llegar casi
al corazón. La parte sobrante se echa en agua
fresca con perejil y se pone al fuego para hacer
un caldo.
En una sartén se echa un poco de buen aceite
de oliva y se saltean las alcachofas. Una vez
doradas se añade ajo laminado al gusto y, una
vez dorado éste, se le añade a la sartén media
cucharada de harina, salsa de soja, vino Fino
La Ina y el caldo que hicimos con las hojas
sobrantes. Cuando reduzca casi a la mitad, se le
añaden los langostinos para que no queden muy
cocidos.
Se pasa al plato de presentación y se le
espolvorea un pellizco de cebollinos.

Ingredients for four people
8 artichokes
12 king prawns
parsley

2 cloves of garlic
flour

La Ina Fino Sherry from Bodegas Caballero
Method
To prepare this dish, it is essential to select
the best quality raw materials. Therefore, the
artichokes should be picked one by one so as to
guarantee that they have the right consistency
and ripeness. Once selected, peel and trim the
artichokes well and cut them off from the upper
part towards the heart. Cook the remaining
leaves in boiling water with parsley to make a
soup.
Sauté the artichokes in a frying pan with a
little prime quality olive oil. When golden
brown, add garlic to taste, brown and then add
half a spoonful of flour, the soya sauce, the La
Ina Fino sherry and the water used to cook the
remaining leaves. Reduce liquid to half and then
add the king prawns so as to avoid overcooking
them.
Transfer to serving plate and scatter a garnish
of chopped spring onion on top.

I remember my father coming back
from the butcher’s; in those days
things were not like they are now
when everything is sold already cut up and
cleaned. I used to watch my mother de-bone,
clean and boil the meat, carefully preparing
all the ingredients and converting them, almost
as if by magic, into mouth-watering casseroles,
inviting you to dunk a piece of bread and savour
the taste.
The charm of traditional cuisine is that it came
from necessity, and it was made with wisdom,
love and time. Everything required many hours
of preparation but no-one minded, they didn’t
know anything about chemical properties or
reactions, but incredibly, all the dishes were
equally delicious!

Recuerdo a mi padre viniendo de
la carnicería; por entonces
no era como hoy que te venden
los productos lavados y cortados. Veía a mi
madre deshuesar, limpiar, hervir y elaborar
con cariño y dedicación todos esos productos y
convertir por arte de magia en un caldero estas
elaboraciones en las que no te podía faltar una
pieza de pan para mojar en esa Magia.
El encanto es que era la cocina de la necesidad,
hecha con sabiduría, cariño y tiempo. Eran
muchas horas para cualquier elaboración, no
pesaban, no entendían de propiedades ni de
reacciones químicas, y qué maravilla ¡Todos los
guisos eran iguales de sabrosos!

Ingredientes
1 perdiz o media por persona, 4
puerros, 5 ó 6 dientes de ajo, 3
zanahorias, 1 pimiento rojo, 1/4
litro de Manzanilla de Sanlúcar,
2 tomates rojos, 1 hoja de laurel,
pimienta negra molida, caldo
de perdiz, 1 ramita de romero,
1 ramita de tomillo (o media
cucharadita de tomillo molido),
Aceite de Oliva Virgen Extra, sal,
azúcar, agua, 50 grs. de Arroz
Redondo Brillante Herba
Preparación del caldo
Deshuesamos la perdiz y colocamos
en una rustidera. Tostamos los
huesos al horno a 250o durante
30 minutos y desgrasamos con
Manzanilla.
Lo vertemos en una olla donde
previamente hemos pochado 1 puerro
cortado, 1 zanahoria y 3 dientes
de ajos tostados al fuego con piel,
laurel, una cucharadita de sal, 2
gr. de pimienta negra molida y un
vaso de vino oloroso. Lo cubrimos
con agua y lo dejamos cocer a fuego
lento durante una hora.
Preparación fondo de arroz
Picamos 2 ajos, los sofreímos
y regamos con Manzanilla.
Evaporamos el alcohol y agregamos
3 puerros, 2 zanahorias y un
pimiento rojo, todo finamente
picado. Le agregamos 5 grs. de
azúcar, para rectificar la acidez
del tomate, y 3 grs. de sal. Lo
dejamos tapado a fuego lento
durante 20 minutos.
Preparación del arroz
Salteamos la carne de la perdiz en
una sartén que previamente hemos
macerado en aceite, pimentón,
sal, tomillo y romero y la vertemos
en el fondo de arroz. Le agregamos
400 grs. de caldo y lo ponemos
a hervir. Le agregamos 200 grs.
de Arroz Redondo Brillante y lo
tenemos 2 minutos al fuego, lo
rectificamos de sal y le agregamos
1 ramita chica de tomillo. Lo
dejamos 1 minuto reposando.
Migas ingredientes
1 chorizo, 1 morcilla, 1 cabeza
de ajo, pan de pueblo durito,
1 cebolla, 1 pimiento rojo, 1
pimiento verde, sal y 1 copa de
Manzanilla.

Method for the soup
Debone the partridge and place on
a rustidera (metal tray). Roast
the bones in the oven at 250O
for 30 minutes, remove fat with
Manzanilla.
Tip into a pan in which the
following ingredients must have
been previously stir fried: 1
leek, cut, 1 carrot, 3 cloves of
garlic unpeeled –roasted on the
fire - a bay leaf, a teaspoon of
salt, 2 g of ground black pepper
and a glass of Oloroso sherry.
Cover with water and cook on low
heat for one hour.
Method for the base
Peel and chop 2 cloves of garlic,
stir fry, pour in the Manzanilla,
evaporate the alcohol, add the
remaining leeks, carrots and the
red pepper, all finely chopped;
next, add 5 g of sugar to mitigate
the acidity of the tomato and 3 g
of salt. Cook on low heat for 20
minutes with the lid on.
Method for the rice
Sauté the partridge meat,
previously macerated in oil,
paprika, salt, thyme and rosemary,
in a frying pan with the base.
Add 400 ml of stock, bring to the
boil and add 200 g of Brillante
short grain rice. Simmer for
eight minutes on high heat, for 11
minutes on low heat and season with
salt. Add a small sprig of thyme
and leave to stand for 1 minute.
Ingredients for the migas
1 chorizo
1 black pudding
1 bulb of garlic
Country loaf, hard crust
1 onion
1 red pepper
1 green pepper
salt
1 glass of manzanilla
Ingredients: 1 quail or half per person , 4
leeks, 5 or 6 cloves of garlic, 3 carrots, 1 red
pepper, 1/4 litre Manzanilla from Sanlúcar, 2
ripe tomatoes, 1 bay leaf, ground black pepper,
partridge stock, 1 sprig of rosemary, 1 sprig
of thyme (or half a spoonful of ground thyme,
Extra Virgin Olive Oil, salt, sugar, water, 50 g
Brillante Herba short grain Rice.

La historia de esta empresa
comienza en 1935 cuando Baldomero
Moreno Espino inicia su actividad
profesional en el comercio de
maderas. En 1940 se embarca en el
negocio del aceite de oliva y en 1944
en la fabricación de salsas. Ambas
actividades bajo la marca MUSA. La
actividad exportadora se inicia en
1947. En el año 1951 se adquiere la
Bodega “Benavides” emprendiéndose
entonces el negocio vitivinícola.
Estas cuatro ramas principales de
actividad siguen siendo una realidad
hoy, habiendo ampliado las gamas de
productos que ofrece. Este desarrollo
es posible gracias a la intensa
actividad interna que realiza en su
laboratorio de I+D+i, para obtener
productos cuyo pilar básico es la
calidad que demanda el consumidor
actual y por la que son valorados.
Desde la primera botella de aceite o
el primer bote de Mayonesa MUSA han
transcurrido muchos lustros, pero la

La cocina de Choco siempre ha
estado cocinándose desde que
yo era muy pequeño. Recuerdo
cuando mi hermano y yo veníamos del cole
y mi padre siempre nos hacía un guisito.
Aquellos olores no se olvidan, siempre
había algo en la olla.
Pero hay algo en especial que recuerdo:
cuando mi padre y un cliente del bar se
hacían las cabezas de los corderos. El
majado de aquel asado es único en mi memoria
y luego cuando se las comían... era algo
irrepetible.
Estoy seguro de que lo más importante de
la cocina tradicional era el amor que le
dedicaban, la paciencia y el buen producto
que elegían.
The Choco’s cuisine has been
taking shape in my head
since my early childhood. I
remember that when my brother and I returned
home from school, my father was always in the
kitchen preparing a stew. There was always a pot
cooking, and the smells are unforgettable.
However, one special memory which will always
stay with me is that of my father and one of his
clients preparing the head of a lamb to roast
it, and crushing the ingredients in a mortar to
garnish the meat, which they always ate as soon
as it was ready.
I am convinced that the most important aspect of
traditional cuisine was the love and dedication
our mother’s put into it and their talent to
choose the finest products.

The story started in 1935 when Baldomero
Moreno Espino embarked on his career in the
wood business. In 1940 he went into olive oil
and in 1944 he began to manufacture sauces,
marketing both products under the MUSA brand
name. He started exporting in 1947 and in 1951
he acquired Bodega “Benavides”, subsequently
entering the wine business.
The company continues to pursue those four
principal activities today, although it
now offers wider ranges of products. Its
development has owed much to the intense
work carried out in its own R+D+i laboratory,
producing products capable of offering the
quality expected by today’s consumers. Indeed
that quality has become the hallmark of MUSA
products.
Many years have passed since MUSA sold its first
bottle of oil or its first jar of mayonnaise, but
the characteristic QUALITY of the MUSA brand
remains unaltered- whether the product in
question be Cocktail Sauce, Roquefort Sauce,
Salsa Brava, Ketchup, Mustard , Olive Oil,

Ingredients
4 large red prawns
chickpea casserole stock
2 spinach leaves
1 carrot
1 spoonful of MUSA Mayonnaise
Method
Remove the prawns’ heads and toast in the grill.
Reduce the chickpea stock; squeeze the heads to
get the juice and add to the stock. Cook over a
low heat and drain.
Grill the prawns coated in plenty of salt, and
blanch the spinach leaves with a carrot slice.
Presentation
Pour a little amount of sauce mixed with a
spoonful of Musa mayonnaise onto the deep part
of the plate. Decorate with the spinach leaf and
crown with the prawn head fried in olive oil.
Carabineros andaluZ Con Mayonesa Musa y esPinaCas
Ingredientes
4 carabineros
caldo de guiso de garbanzos
2 hojas de espinacas
1 zanahoria
1 cucharada de Mayonesa MUSA
Elaboración
Quitamos las cabezas a los carabineros y las
ponemos en la plancha para tostarlas. Ponemos a
reducir el caldo de garbanzos. Sacamos todo el
jugo de las cabezas, se las añadimos al caldo de
garbanzos y dejamos a fuego lento. Apartamos y
colamos la salsa.
El carabinero se hace en la plancha a la sal,
escaldamos la hoja de espinaca y una rodaja de
zanahoria.
Montaje
Ponemos un poco de salsa en el fondo del plato
mezclada con la cucharada de Mayonesa Musa.
Colocamos los carabineros, adornamos con la
hoja de espinaca y el trozo de zanahoria y, por
último, coronamos con la cabeza del carabinero
previamente frita en aceite de oliva. 153

Ruta del Veleta (Cenes de La Vega - Granada)
Mis recuerdos de la cocina se
los debo a mi padre, toda
nuestra vida familiar ha
girado en torno a nuestro restaurante.
Siempre recordaré cuando iba a la cocina
de la Ruta y me encontraba a mi padre
pendiente de todo el servicio de cena
o almuerzo. Recuerdo también todo el
sacrificio y esfuerzo que han realizado
mi padre y mi tío para levantar y sacar
adelante este proyecto tan apasionante
llamado Ruta del Veleta.
El encanto de esa cocina era la
dedicación, el amor y el tiempo que le
dedicaban a esos manjares.

first culinary experiences since
our family life has always revolved
around our restaurant. I will always remember
how when I went to La Ruta, my father was always
on hand, making sure that all the lunches and
dinners were served properly. I also recall all
the sacrifices and effort that my father and
uncle made for bringing this exciting project
called Ruta del Veleta into fruition.

Ingredientes para 4 personas
2 sesos de cordero
4 riñones de cordero
3 criadillas de cordero
5 huevos
sal
harina
1 huevo para rebozar
Cerveza Alhambra
Elaboración
Limpiar los sesos, criadillas y riñones y
cocer cada uno por separado. Una vez cocidos,
enfriar. Pasar cada ingrediente por harina y
huevo y freír en aceite de oliva. Picar cada
ingrediente, mezclar con los huevos batidos y
proceder a realizar una tortilla. Terminar con
un poco de tomate concassé. Acompañar con una
Cerveza Alhambra muy fría.
El procedimiento de esta tortilla la he
adquirido de mi padre, José Pedraza, quien me
cuenta que la aprendió cuando comenzaba de
ayudante de cocina en varios restaurantes de
Granada. Él me lo ha trasmitido y yo no he variado
la receta en ninguno de sus ingredientes.

Ingredients for 4 people
2 lamb brains
4 lamb kidneys
3 lamb testicles
5 eggs
salt
flour
1 egg for the batter
Alhambra Beer
Method
Wash the brains, testicles and kidneys thoroughly
and cook them individually. Leave to cool down.
Coat them in egg and flour and deep fry in olive
oil. Chap all the ingredients. Mix with the egg and
cook the omelette and finish with a little tomato
concasse. Accompany with a well chilled Alhambra
beer.
I learnt the procedure to make this omelette from
my father José Pedraza, who told me that he learnt
to make it when he began working as a kitchen
assistant in various restaurants in Granada. He
passed the recipe on to me and I have not changed
any of the ingredients.

desarrollado en el Campo,
Campo dicho con mayúsculas,
campo de huerta y ganado criado de forma
totalmente artesanal, en un lugar privilegiado
como Coín, en el Valle del Guadalhorce o el Valle
del Azahar.
Viví mi infancia rodeado de productos frescos
y recién cogidos de la mata: tomates, patatas,
pimientos, frutas frescas, aceitunas,
almendras, higos, etc. De la cocina de leña y
el horno de ladrillo de barro a la tierra, donde
todo esto estaba plantado, había escasos 50
metros y, claro está, ver tanto a mi madre como
a mi padre cocinar con todos estos productos era
el día a día.
Recuerdo los olores del pollo asado en el horno
de leña con manteca de cerdo, o los huevos
de lasgallinas recién cogidos, fritos con
cebolletas en el invierno, o el pan hecho con
una capa de ceniza en su base tras hornearlo al
ladrillo de barro. Todo esto lo viví en directo.
I was brought up in the Countryside, and
I really mean the Countryside, with its
orchards and its livestock reared in a
completely natural way, in places such as Coín in the
Valle del Guadalhorce or the Valle del Azahar.
During my childhood I was surrounded by freshly
picked products: tomatoes, potatoes, peppers, fresh
fruit, olives, almonds, figs, etc. There was hardly
50 metres between the wood-burning stove, the mud and
brick oven and the patch of land where everything was
planted and I used to see both my mother and father
cook with these products every day.
I remember the smell of chicken roasted with lard in
a wood-burning oven; of freshly laid eggs fried with
spring onions in the winter, and of bread baked in a
brick oven over a layer of ash. I saw it all with my own
eyes.

Ingredientes para 4 personas: Para las Coquinas: 500 grs. de coquinas frescas, 50 grs. de sal gorda, 1 l
de agua, 1 hoja de laurel, 1/2 limón, 50 ml de Fino González Byass, 1/2 l de agua. Para el refrito: 50 ml
de Aceite de Oliva Virgen Extra, 2 dientes de ajo, 1 cebolleta pequeña, 1/2 pimiento rojo, 1/2 pimiento
verde, 1 trozo de puerro, 150 grs. de patatas, azafrán en rama, 125 ml de Fino González Byass, 1 hoja de
laurel, 1/2 guindilla roja, el caldo de las coquinas,sal
Elaboración
Lavamos muy bien las coquinas y las
ponemos a “depurar” con el litro de
agua y los 50 grs. de sal gorda durante
media hora en una bandeja, bien
estiradas y sin que el agua cubra por
completo las coquinas (esta operación
sirve para poder eliminar los posibles
restos de arena que puedan contener las
coquinas).
Una vez bien limpias las ponemos en una
cacerola con tapa junto con el limón,
el laurel, el Fino González Byass y el
1/2 litro de agua. Las ponemos al fuego
y las dejamos hasta que se abran muy
suavemente, lo justo, y retiramos del
fuego. Colamos rápidamente el caldo y
retiramos la carne de la concha. Una
vez frío el caldo conservamos en él la
carne de las coquinas. Reservamos.
En una olla ponemos el aceite a calentar
con las verduras cortadas en pequeños
cubos y la guindilla y hacemos un
refrito tradicional, procurando que
no se dore mucho. Añadimos el azafrán,
un poco tostado previamente, y el Vino
Fino González Byass, dejamos reducir
un poco y añadimos el caldo de las
coquinas, el laurel y ponemos a punto
de sal. Dejamos hervir todo el conjunto
unos 3-4 minutos. Retiramos del fuego y
reservamos.
Otros: perejil fresco, la carne de las
coquinas, pan de pueblo, 1 diente de
ajo, Aceite de Oliva Virgen Extra

Ingredients for 4 people
For the Coquina clams: 500
g fresh coquina clams, 50
g sea, salt, 1 l water, 1
bay leaf, 1/2 lemon, 50 ml
Fino González Byass, 1/2 l
water.
For the stir fry . 50 ml,
Extra Virgin Olive Oil, 2
cloves of garlic,1 small
spring onion, ½ red pepper,
½ green pepper, 1 piece
of leak, 150 g potatoes,
strands of saffron, 125 ml
Fino González Byass, 1 bay
leaf, 1/2 red chili, water
used to cook the coquina
clams, salt.
Method
Wash the coquina clams
thoroughly, layer them
into a deep dish and soak
in 1 litre of water (making
sure that the clams are
fully covered) with 50 g of
sea salt for half an hour
to remove all grit and sand
residue from inside the
clams.
Once the clams are properly
clean, place them into a
pan with lid together with
the lemon, the bay leaf,
the Fino González Byass
and ½ litre of water. Cook
gently until the clams are
just beginning to open,
remove from the heat, drain
immediately, scoop out the
meat, and tip it into the
cooking water when it has
cooled down. Set aside.
Heat the oil in a pan
with the vegetables,
cut into small dices,
and the chilli. Stir fry
until lightly brown. Add
the saffron, previously
toasted, and the Fino
González Byass. Reduce a
little, pour in the cooking
liquid from the clams, add
the bay leaf and season
with salt. Simmer for 3
to 4 minutes. Remove from
heat and set aside.

Ir a casa de mis abuelos todos los
días marcó mi infancia. Ver cómo mi
abuela se afanaba en la cocina con
las hortalizas que traía mi abuelo del huerto
y las transformaba en esos guisos que quedaron
para siempre en mi paladar.
Otro recuerdo importante de mi infancia está
relacionado con la matanza. Todo lo que rodeaba
ese rito: la unión familiar de esos días, los
preparativos previos, el olor a romero, tomillo,
comino, nuez moscada...
Son momentos mágicos que perviven en mi
memoria e hicieron que quisiera dedicarme a
cocinar. Recrear los platos de mi abuela, y
reconstruirlos según los tiempos que vivimos,
hace que gracias a la cocina vuelva al tiempo de
mi niñez.
El encanto de la cocina tradicional radica en el
tiempo, la dedicación plena a los quehaceres de
la cocina, sin el estrés y con cariño.

day during my childhood and I saw
how my grandmother busied herself
in the kitchen with the ingredients which my
grandfather brought in from the vegetable
garden, transforming them into those wonderful
stews which I can almost still taste today.
Another important memory from when I was young
was the yearly slaughtering of the pigs with
its special rituals: all the family getting
together; the preparation; the smell of
rosemary, thyme, cumin, nutmeg...
They are magical moments which remain clear
in my memory and made me want to become a chef.
Recreating my grandmother’s dishes and adapting
them to the times we live in always takes me
back to the time of my childhood. The essence of
traditional cooking is based on the time which
was dedicated to it and the long-established
methods, full of love, and without stress.

Ingredients
1 ½ kg approx. Islasur Eel
1/2 l dry white wine
1 onion
2 cloves of garlic
red peppers, roasted
flour to bind the sauce
2 dl Extra Virgin Olive Oil
fennel
1 potato
1 carrot
2 artichokes
nutmeg
fish stock
salt and pepper
strands of saffron
Method
Wash the eel thoroughly; remove the skin, cut
into pieces and season with salt and pepper.
Brown lightly in a pan, sprinkle a little flour
and add the bay leaf, thyme and parsley.
Pour in the wine and cook with the onion, a
few carrots and the garlic, sliced. Reduce a
little; add some fish stock, season with salt
and pepper, a pinch of nutmeg and the strands of
saffron previously crushed in a mortar with a
pinch of salt.
When the eels are well cooked (25 minutes
approx.) remove from the pan and drain the
cooking liquid or sauce. Serve warm with
the sauce and decorate the plate with the
artichokes, the potato, carrots and roast
peppers.

una Anguila de Islasur de un kilo y medio
aproximadamente
1/2 l de vino blanco seco
1 cebolla
2 dientes de ajo
pimientos asados rojos
harina para ligar la salsa
2 dl. de Aceite de Oliva Virgen Extra
hinojo
1 patata
1 zanahoria
2 alcachofas
nuez moscada
caldo de pescado
sal y pimienta
unas hebras de azafrán
Elaboración
Limpiar muy bien la Anguila de Islasur,
retirando la piel. Se corta en pedazos y
se salpimienta. A continuación se ponen en
una cacerola con aceite a dorar un poco, le
añadimos un poco de harina espolvoreada por
encima, el laurel, el tomillo y el perejil.
Añadir el vino y cocer junto con la cebolla
unas rodajas de zanahoria y el ajo en rodajas.
Dejaremos reducir un poco, añadimos un poco de
caldo de pescado y sazonaremos con un toque de
nuez moscada y las hebras de azafrán majadas en
el mortero con un poco de sal.
Una vez que la anguila está en su punto (unos 25
minutos aprox.), se saca y se cuela el caldo o
salsa resultante de la cocción. Servir caliente
con la salsa decorando el plato con las
alcachofas, la patata en rodajas, la zanahoria
y los pimientos asados.

y mi abuela haciendo pestiños...
Mis recuerdos me llevan a los
días previos a la Navidad, donde la verdadera
fiesta era en la cocina, donde cabíamos todos:
abuelos, nietos, sobrinos, etc. Allí se
fraguaba lo que días después disfrutaríamos
en la mesa juntos. El olor inconfundible de la
masa de los pestiños que los niños amasábamos
en el lebrillo de barro, el clásico puchero
para sacar el caldo del consomé, la típica sopa
de picadillo o el relleno del pavo, hoy una
tradición casi perdida en nuestra Navidad.
El encanto de la cocina tradicional era cocinar
sin prisas. Cuando se le dedicaba toda una
mañana a un guiso.
Creo que una simple sopa de tomate bien hecha
no tiene nada que envidiarle a cualquier otra
creación.

My memories take me back to the days leading
up to Christmas, when the real party was in
the kitchen. There was room for everyone:
grandparents, grandchildren, nieces and
nephews… and everything we enjoyed later at the
meal table came from there... the unmistakeable
smell of the dough for the pestiños, which me
and the other kids kneaded in an earthenware
bowl, the traditional meat stew from which the
consommé was drained, the typical picadillo
soup garnished with ham and a hardboiled
egg, the stuffing for the turkey, a Christmas
tradition which has largely disappeared.
The charm of traditional cuisine was to cook in
an unhurried manner and dedicating the whole
morning to prepare a meal.
I think a well-made simple soup is every bit as
good as any other culinary creation.

Para 4 Personas
½ Kg. de tomates maduros
4 pimientos verdes
1 cebolla
3 dientes de ajo.
1 pizca de comino y sal.
Elaboración
Contar los pimientos a tiras, freír y apartar.
En el mismo aceite se hace el sofrito de cebolla
y ajos.
Añadir los tomates pelados y rallados.
Refreír todo junto y añadir ½ l de agua, más una
rama de hierbabuena. Dejar hervir 20 minutos y
añadir un majado de comino, sal y pimienta.
Agregar el pan hasta consumir el caldo.
Servir caliente con 2 tiras de pimientos fritos y
hoja de hierbabuena.
Acompañar con una Cerveza Cruzcampo de Barril
muy fría.

½ Kg ripe tomatoes
4 green peppers
1 onion
3 cloves of garlic
1 pinch of cumin and salt
Method
Cut the peppers into strips, fry and set aside.
Use the same oil to stir fry the onion and
garlic.
Add the tomatoes, peeled and grated.
Fry all the ingredients together, and ½ l of
water and a sprig of mint, simmer for 20mn, and
season with cumin, salt and pepper, previously
crushed together in a mortar.
Add bread to thicken the soup.
Garnish with two pepper strips and one mint
leave. Serve hot.
Accompany with a well chilled Cruzcampo’s

Desde bien pequeño tengo el
recuerdo de las historias de mi
abuela, mis tías y mi madre, que
me contaban cómo mi bisabuela Mercedes, tras la
llegada de su marido del matadero en el Barrio de
San Bernardo, tenía la posibilidad de marchar un
caldo de carne (puchero), en el cual introducía
los elementos necesarios y habituales, y al
mismo tiempo unas piezas de mollejas de ternera,
que supondrían las delicias de toda la familia,
ya que eran cocinadas de diferentes maneras.
El encanto de las cocinas antiguas reside, a mi
modesto entender, en el tiempo que se dedicaba a
cocinar y en los productos que utilizaban.

Since I was very small I remember

typical ingredients complemented with veal
sweetbreads, which were cooked in various
different ways to please the whole family.
In my humble opinion, the charm of traditional
cuisine lay in the amount of time which was
dedicated to it and the natural ingredients
which were used.
In 1975, Barbadillo launches Castillo de San
Diego, the most sold white wine in Spain. Also,
Barbadillo markets a wide portfolio of wines
from Jerez – amontallados, olorosos and palos
cortados, among others – in which Manzanilla
Solear stands out.
A strong diversification process has led Bodegas
Barbadillo to globalize its main brands,
develop a red Andalusian wine, Gibalbín,
and acquire other D.O.’s. There are other
projects, like winery Bodegas y Viñedos Vega
Real in the D.O. Ribera del Duero, the winery
Bodega Pirineos in the D.O. Somontano and
Sierra de Sevilla, a producer and marketer of
100 percent Iberian Acorn Pork products.

Method
Stir fry the onion,
garlic and green
pepper – finely
chopped – in olive oil
until tender. Then
add the tomato purée
and the mint leaves,

along with a pinch
of sugar and salt.
Cook the vegetables
over a low heat so as
to concentrate the
flavour desired. Set
aside.
Bleed the sweetbreads
in water and ice
and cook them in
water seasoned with
spices. Bring to the
boil. Remove the
sweetbreads from the
pan, leave to cool down
and remove the rubbery
film which surrounds
them with a knife.
Cut the sweetbreads
into pieces, season
with salt and pepper,
coat them in flour and
deep fry them in olive
oil. Cut the potatoes
into pieces – not too
large – cook them in
boiling water until
tender and fry until
golden crispy.
Presentation
Place four spoonfuls
of the stir fry mix on
a soup dish, lay the
sweetbreads on top
and distribute the
freshly fried potatoes

Elaboración
Para la fritada de
tomate, rehogamos en
el aceite de oliva el
ajo, la cebolla y el
pimiento verde, cortados
finamente. Hacemos un
rehogado hasta que la
verdura nos quede floja.
Llegado el momento,
añadimos el tomate
triturado, las hojas
de hierbabuena picadas
y el punto de azúcar y
sal. Es importante que
cocinemos a fuego lento
dicha preparación, hasta
lograr concentrar el
sabor al gusto deseado.
Reservamos. Por otro
lado, desangramos las
mollejas en agua y hielo,
al tiempo que preparamos
un agua especiada, donde
metemos las mollejas y las
llevamos a hervor. Las
apartamos y, una vez que
se hayan enfriado, las
limpiamos de una telilla
gomosa que las rodea.
Las trocearemos
para pasarlas por la
harina, previamente
salpimentadas, y las
freímos en aceite de
oliva. Las patatas se
cortan en un tamaño no
muy grande y las pochamos
hasta que nos queden
tiernas, para freírlas y
dejarlas crujientes.
Para emplatar ponemos en
un plato sopero. Sobre el
fondo colocamos cuatro
cucharadas de fritada,
las mollejas fritas
y salpicamos con las
patatas recién fritas.
Acompañar con una copa
de Barbadillo Gibalbin
Crianza 2009 - Tinto de la
Tierra de Cádiz.
