A new eco-friendly technique to clean and disinfect food, particularly poultry, and food contact surfaces is effective against Salmonella, E.coli and, Campylobacter and a range other pathogens, according to EAU Technologies.

The Empowered Water process, which has just been awarded five-year patent protection, from the United States Patent Office, uses a combination of electrolysis cell technology, salt and electricity. It changes the ionic structure of water to create non-toxic, oxidized antimicrobial solutions and reduced antioxidant cleaning solutions, said the company.

Green alternative

Joe Stapley, the companys vice president of Business Development & Investor Relationstold FoodProductionDaily.com: What the technology itself brings to food and beverage processors of any kind is truly a green alternative for most of its cleaning and disinfecting applications. EAUs non-toxic disinfectant is up to 80 times more effective than traditionally used chlorine. And the cleaner created in the process is every bit as effective as most caustic cleaners.

The company claims it is able to meet any volume demands for large food processors since it has broken the volume constraints typically found in competitors electrolyzed water technology.

Poultry has been a particular focus of the development work. The electrolyzed alkaline water is used to clean the chicken, followed by a rinse of the electrolyzed acidic water usually in the inside/outside bird wash to kill any remaining food-borne pathogens.

In poultry processing with a combination of the electrolyzed acidic solutions and electrolyzed alkaline, EAU can help a poultry processing operation meet the new USDA standards for Category 1. We believe that we can show a savings in chemical costs as well as overall water usage. The processor is going to have a cleaner product while creating a safer work environment, said Stapley.

The process is currently working in a major poultry processing facility in Northern Georgia as part of the pathogen intervention system processing over 350,000 birds per day.

Dairy Industry

The company is currently seeking approval for Empowered Water as an alternative for use as an Online Reprocessing (OLR) agent and is exploring dairy industry applications.

En Santander, donde operan cinco plantas incubadoras, con una produccin de pollo que representa cerca de 30% de la nacional, y alrededor de 18% la de huevo, parece estar empezando a notarse cierto grado de saturacin de explotaciones avcolas, particularmente en La Mesa de los Santos y Lebrija, a juicio de Jorge Mesa, que invita a que se analice la conveniencia de pensar en buscar nuevas reas, teniendo en mente el riesgo sanitario que se corre al concentrar poblaciones muy altas de aves. Resolver esta situacin hace parte de los planes de crecimiento de la empresa para los prximos dos aos, a sabiendas de que lo ms aconsejable sera irse a producir el pollo cerca de Bogot, donde est el consumo, pero en la decisin final pesan significativamente los costos de produccin, muy por encima de los de otras regiones.

La experiencia de Delichicks

En febrero de 1989, Distraves lider una trascendental modernizacin de las costumbres del consumo de pollo en Colombia, al ser la primera empresa en dedicarse a la elaboracin de carnes fras, con su marca Delichiks. Explica que desde cuando la empresa apareci en el mercado con la lnea de carnes fras, se busc que por sus precios estos productos estuvieran al alcance de los consumidores, independiente de su estrato socioeconmico. La rpida y positiva acogida permiti a la empresa diversificar ampliamente la oferta y pronto pas de los seis productos "fundadores" a cuarenta y cinco; hoy, al cabo de trece aos de actividades, del portafolio hacen parte veintitrs, que se ofrecen en treinta y dos presentaciones.

Dentro del conjunto de carnes fras que se ofrecen hoy en Colombia, en tan slo diez aos las de pollo han conquistado entre 12 y 15%, participacin que se atribuye en buena parte a que conservan las caractersticas saludables que se le reconocen a la carne de pollo, entre ellas su bajo contenido de grasa y colesterol.

Un promedio de 12% de la carne de pollo que produce Distraves se ofrece transformada en uno de los veintitrs productos de salsamentaria. Para aprovechar la poca navidea se est trabajando para ofrecer a partir de diciembre tres nuevos productos. Distraves beneficia diariamente entre 75 mil y 80 mil pollos y tiene an suficiente capacidad instalada para crecer en las reas de beneficio, incubacin, carnes fras hasta el 2004, sin necesidad de ampliar las construcciones. Para incubar, engordar, alimentar, beneficiar y comercializar estas aves emplea en forma permanente a cerca de 1.300 personas y a trescientas eventualmente. La comercializacin de 72% de su produccin tiene lugar en sesenta y cinco puntos de venta en todo el pas.

Esta empresa santandereana ha tenido el buen juicio de hacer partcipe de su crecimiento a comunidades campesinas de Charal y Barichara, a las que ha enseado a engordar pollo como mecanismo para crear empleo y darles acceso a una mejor calidad de vida ante la desaparicin del cultivo del tabaco como medio de ganarse la vida.
